Coconut Milk Rice .........
Wash and soak 2 cups of jeera / Basmati rice in water for 30 minutes. Rinse the rice well, drain it on a collander and keep it aside. Heat a thick bottomed pan with 1 tblsp of oil, when hot add 1 tsp of pepper corns, 1-2 green chilly chopped to pieces and a few curry leaves, stir for half a minute only.
Add 2 cups of coconut milk and 2 cups of water. Now put this pan on heat and bring to a boil on medium flame. Add in the rice and stir well. Add salt to taste at this point and reduce the heat to minimum, cover with a tight lid.
Let cook on low heat till almost done, remove the lid and add 1 cup of shredded coconut and mix well and cook till done.
Remove and garnish with handful of finely chopped coriander leaves.
The coconut rice is ready. You can serve this rice with any spicy curry of your choice.
