Chilled Mango and Sago Pearls Pudding.


Chilled Mango and Sago Pearls Pudding....................


Wash and soak one cup of Sabudana / Sago in 4-5 cups of water for 2 hrs. Drain off excess water and keep it ready. 


Bring to a boil 2 cups of milk to which 1 cup of water has been added. Lower heat and add in the strained sabudana and stir well, cook till they become translucent / mirror like while stirring now and then. Be careful and keep a watch so that the sabudana does not get sticky or burnt. 


Add ½ cup of sugar (plus or minus depending on individual’s taste) to the sabudana mixture. When the sugar melts, stir and cook for another 5 minutes. Do not add much of water as the sabudana mixture should be thick. Add 1 tsp cornflour to ½ cup of water and mix well. See that there are no lumps. Add this to the Sabudana mixture and mix well. The texture of the sabudana should get very thick, such that you should spoon them into glasses and not pour it into them. The sabudana pudding is ready. Now remove and keep aside to cool. When completely cool, keep it in the fridge to get chilled.


Meanwhile remove the out skin of 2 ripe Alphonso Mangoes. Slice the the two sides of one mango and cut them into cubes. Now remove the pulp of the remaining mango along with the other full mango and blend in mixer with 2-3 tblsp of sugar to a smooth paste. Do not add water. Keep the Mango mixture and the chopped pieces in the fridge to chill. This takes atleast a minimum time of 4-5 hrs. But best if kept for around 7-8 hours.


To Serve : Take medium sized glasses. Add in about 2-3 tblsp of Mango mixture into it first. It should cover about 1/3 level of the glass. Now gently scoop in the Sabudana mixture to above 2/3 level. Be careful when pouring, extra pressure will make it sink. Now gently add the cubed mango pieces on top and serve immediately. Tastes Yummy.
