Chilled Cashew Fruit Juice.


Chilled Cashew Fruit Juice to beat the summer heat ...........


Both Cashew fruits and nuts are available in abundance in southern part of India. The kokan region is very famous for the same. Goa in general is famous for cashews in different forms and drinks.


Consumption of Cashew fruit has its own health benefits like a healthier heart, stronger nerves, It improves bone and oral health. It consists of antioxidant also. The juice however has a bit of gummy texture which may not be liked by many people. People have to adapt to its taste and is individuals choice. 


Wash and wipe 2-3 large sized Ripe cashew fruits. Cut them into pieces. 

 

Put the cashew fruit pieces in a blender with 2 heaped cups of sugar, 2 cups of water and run the mixer to make a smooth paste of the cashews. Add 1 tsp of dry ginger powder and 1 tsp of white pepper powder and blend together for another few minutes.


The cashew sugar should be made into a really fine paste. Remove and pass the mixture through a fine sieve. Add about 2 liters of water to this and mix well. Check the sugar and add if necessary only. If too sweet you add more water. The juice should be really thin in texture.


Keep the juice in fridge overnight to get chilled. This juice has to be served very very chilled to get the best taste of the cashews.
