My Festive Combo Meals Veg. Thali No~ 431.

“My Festive Combo Meals Veg. Thali No~ 431 : Makhana Vanilla- Dates Custard, Kottambari Palle Gojju (Sweet- Spicy Coriander Leaves Chutney), Crispy Sabudana- Besan- Methi Vadas, Rulava Panna (Rava Upma/ Uppittu)” … a simple NO Onion- Garlic- Rice Meals on the auspicious occasion of Maha Shivratri … "Maha Shivaratri Greetings to all my friends here; may Shiva- Parvati shower their choices blessing on all of us on this auspicious occasion" …

** There are plenty of occasions when one wants to switch over from regular Thali meals to something different, sort of either solo meals or combo meals that include different varieties of dishes clubbed together. Hindus observe fasting/ upwas on many given occasions like Ekadashi, Sankashta Chaturthi, Shanivara etc., the list is long and endless. While many observe it consuming only fruits or milk, some keep a fast of only water too and then there are many who do not even drink a sip of water.

** In my home we observe a fast of one meal a day on most of the upwas/ fasting days as somehow both hubby and me cannot go without eating anything the whole day as we are both on medications. I include different combinations of dishes in my festive upvas meal platter to make it that much more appealing and the one dish that mainly includes is the payasam/ dessert that can be offered as Naivedyam to God. The other dishes are usually prepared with rava or sabudana both permissible for fasting.

** I have wanted to prepare Makhana Kheer/ Payasam for a long time, however changed it over to custard recipe today and prepared the same for Maha Shivaratri Naivedyam. I added on dates syrup to cut down on sugar addition which is what I do most of the time as I find it tastier and healthier option.
