** Upkari (Bhaji/ Stir fry) is a must in most homes in southern parts of India and we GSB Konkani Saraswats always make it a point to follow the traditions set by our ancestors of following their guidance for a healthy lifestyle. Trust me, they knew better than us and can easily give a run to today’s nutritionist, the only hitch being they could not explain scientifically as they just followed what was handed down through generations, but all said lead a very healthy and joyous life unlike today’s generation.
** In my home, I have followed this guidance over the last two decades of preparing simple upkari/ stir fry for meals as I had always seen Amma do so. There was never a day when it was absent in our plates during childhood and I always wonder how she coped up with the pressure of kitchen workload be it preparing breakfast items, lunch dishes, evening tiffin or dinner. If at all I will be able to do even 10% of her workload I will consider myself fortunate. Do try this simple bhaji as a side dish and enjoy with family.
** Here is my simple recipe for “Cabbage- Piyava Upkari/ Bhaji (Cabbage- Onion Stir Fry)” … my style, do include it for a healthy lifestyle ....
** Ingredients :
Cabbage : 250-300 gms
Onion/ Piyavu/ Kanda : 2 medium sized
Mustard Seeds/ Sasam/ Rai : 1 tsp
Urad Dal/ Black Gram Dal : ½ tsp
Methi/ Fenugreek Seeds : ¼ tsp
Haldi/ Turmeric Powder : ¼ tsp
Hing/ Asafoetida Powder : ½ tsp
Dry Red Chilly (any) : 3-4
Curry Leaves/ Kadipatta/ Karbevu : 8-10 fresh ones
Salt/ Namak/ Meeta : to taste
Oil/ Tel/ Tela : 2-3 tblsp
** Peel off the skin of onions and slice them lengthwise thinly and keep it aside ready. Cut the cabbage also into the same size as that of the onion, put it in a colander and rinse under running water. Keep it aside to rest so that all the excess water drains off (say atleast for 20-30 minutes. Keep them ready aside.
** Heat oil in a thick bottomed kadai, when hot add mustard seeds when they begin to splutter, lower the heat and add methi seeds, urad dal, curry leaves, hing powder, haldi powder and dry red chilly cut to small pieces. Fry for a 1-2 seconds and then add the sliced onion and fry on medium heat until transparent but not browned.
** Add sliced cabbage, salt to taste, mix well and cook on medium to low heat until done. Keep stirring in between for even cooking of the veggies without browning them. If at any stage you find that the bhaji is too dry, or is being stuck to the bottom, then you can sprinkle some water, mix well and continue to cook until done.
** Note : At no point should you raise the heat or cook without stirring in between, this ensure perfect cooking without burning. When cooked covered with a tight lid on low heat usually the requirement of water is nil, so be careful.
** “Cabbage- Piyava Upkari/ Bhaji (Cabbage- Onion Stir Fry)” is done ready to be served. Always make upkari/ bhaji an important part of your meal by serving it each time in different combination of veggies for best of taste and health.
