Air Fried- Kananga Podi/ Sweet Potato (Ratalu) Fries.


“Air Fried- Kananga Podi/ Sweet Potato (Ratalu) Fries” … while you want to cut down on oil, yet want to eat those traditional deep fries then Air Frying is the best option … tried Kananga Podi and it turned out fantastic … just made a slight change by cutting sweet potatoes as we do for French fries for easier and even air frying … no difference in taste, crisp and yumz, now, that what I call guilt- free snacking ... try it, it's too good ... absolutely Yummilicious …
 
** Though my Air Fryer is more than 5 yrs old, I have hardly put it to best of use though I always intend too. The issue here is I do still not have the hang of it and after few trials that did not give satisfactory results I always preferred deep frying/ tava frying/ shallow frying or microwaving at times. Well, seeing many posts that are picture perfect fries I have decided to give more trials and follow instructions to the T, the results of few I tried recently have turned out great, so, sure to try more.

** Kananga Podi is a deep fried seasoned sweet potato from GSB Konkani Saraswat Cuisine which I have already shared before. This time I air fried the same but cut them in French fries shape instead of as thin discs as I found fries easier to be air fried. Previously I have also tried Kananga sonto another deep fried snack that had also turned great. Well, hoping to try out more dishes soon, till then enjoy these and enjoy them guilt free after all, I have hardly applied any oil to these fries.

** Here is simple method of preparing “Air Fried- Kananga Podi/ Sweet Potato (Ratalu) Fries” … my style, that can relished as a snack as it is anytime of the day …. tastes wonderful and the plus point is it is healthy ….


** Peel/ Slice the outer skin as thinly as possible of a medium sized thick sweet potato/ kananga/ ratalu, say about 300 gms. Cut it into strips of 1/6 inch in thickness and 3 inches in length, like that of as we do for French fries. Soak them immediately in plenty of water with some salt and let stay for about 25-30 minutes.

** Note : Soaking sweet potato in salt water helps in loosening of most of the starch content in it, thereby making them much crispier otherwise it tends to turn soggy. Remember this is a must step to be followed for tuber varieties.

** Drain water and once again rinse the sweet potato well and then put it on a thick cloth and pat it a little bit dry and then put it in a wide bowl. Add 2 tsp of kashmiri red chilly powder (mirsange pitti/ mirchi powder) or as per taste, ½ tsp of hing (asafoetida) powder, salt (namak/ meeta) to taste, 1-2 tblsp of oil/ tel/ tela.

** Mix the above ingredients well, add them into a airtight box and store in fridge for about an hour or so. Remove and add about 2-3 tblsp of rice flour (tandla pitti/ tandul pitti) and toss all together well. Do not add water or the masala will not be coated evenly as these are not bajia but podi, also if too sticky it will stick to air fryer gauge.

** Note : Remember to add rice flour and toss them all together just before airfrying for best results. Do not add them with other spices at initial stage.

** Preheat Air fryer for 5-8 minutes at 180 deg.C. Now evenly lay the prepared and dusted potato strips after slightly brushing the wire gauge/ mesh of the air fryer with a little bit oil. Now run the machine for 7-8 minutes on 180 deg. C. Open, toss sweet potato and then once again run the machine for another 5-8 minutes or till done.

** Note : Do not apply pressure or use spatula roughly on the air fried sweet potatoes while air frying them to avoid getting cut or mashed.

** When crisp and done remove them on a plate and continue the same procedure with remaining sweet potatoes and till done. Do keep checking in between if necessary and toss them a bit often for even air frying. If you find them too dry or sticky, you can brush a little bit of oil over the sweet potatoes for frying it properly.

** Note : I am new to cooking in Air fryer and still learning new tips and tricks reading on net or on food groups. I cannot vouch on any procedure as each machine differs and has its own mechanism, I am mentioning that of mine which is Phillips model. Once again, do follow the instructions in case of heat temperatures too as that may also differ, just check on booklet for potatoes, usually it is the same.

** “Air Fried- Kananga Podi/ Sweet Potato (Ratalu) Fries” are done and ready to be served. You can just relish them as side dish/ snack with any dishes of your choice for lunch or as snack served with tomato ketchup/ dip of your choice too. Fried dishes are best served hot and fresh from tava/ oven for best of taste. I prepared these to be served during meals along with other dishes and it tasted awesome.

** Air Fryer is a good investment in my opinion though I am not sure of any harm it does if any and luckily, now larger ones are available to suit family requirements. Mine is a small one, commonly available that is pocket friendly. It serves for 2-3 persons depending upon the prepared dish. However, when you consider the health aspect then even it takes some time to do so then I am game for it.
