“Gavunche rulava Godshe’ / Mangalore Rava (Barik Lapsi) Payasam” … A traditional Paayasam prepared out of rava in Konkani Saraswats home as Naivedyam …...
** This is a traditional sweet dish that is prepared in Konkani Saraswats home as Naivedyam item along with others during certain festive or other occasions. I have already posted the one prepared using Jada lapsi ie the kanik / thick bansi rava /, so do not confuse the same with Mangalore Rava which is used to prepare upma. Mangalore rava is finer variety of barik lapsi. Here the lapsi is finer in texture than the normal lapsi and a little bit thicker than the normal rava which we call Bombay rava. Both thicker and thinner variety can be used the only difference being that you will get a thicker textured final outcome in the dish. The recipe is the same for both it is just the usage of different variety of rava. I will not run into other details of this godshe / payasam / naivedyam but will share the link at the bottom of the recipe of the lapsi version and you can check up for reference that link. Also will be soon posting this same dish prepared with finer varieties too. So keep a watch on my blog plz. and do send in your response.
** Ingredients :
Barik Lapsi / Mangalore Rava : 2 cups
Jaggery / Gud : 250 gms grated or cut into small pieces.
Coconut Milk : 150 - 200 ml (I used readymade)
Cardamom Powder : a large pinch.
Yellow Colour : a small pinch.
Cashew Nuts : 10 halves
Raisins : 2 tblsp
Ghee : 3 tblsp
Water : 5 cups boiling water.
** In a thick bottomed pan pan add in ghee and let it melt on medium heat. Add in the cashew nuts and fry till slightly the colour changes, now add in the raisins and further fry till all are evenly browned. The raisins will get swollen. Remove and keep aside to garnish.
** Now in the same kadai add in the rava and fry on medium flame for a few minutes or till your get a nice aroma. Do not burn the wheat, just fry them till slightly colour changes. Add in the pinch of yellow colour and 5 cups of boiling water and bring to a boil, lower the heat, cook till the rava is cooked, it hardly takes time. Keep stirring.
** Add in grated jaggery and mix well. Allow the jaggery to melt completely. Thick is a thick payasam, so do not add in much water. The jaggery when melts becomes thinner too. Cook till the payasam turns little thicker.
** Note : You can increase or decrease the amount of jaggery / gud as per your family taste. Sweetness to a dish is usually individual choice. But this dish if not prepared sweet somehow cannot be relished well.
** Finally add in the coconut milk and mix well. Bring the payasam to boiling point on medium heat, once you see bubbles appearing, lower the heat and simmer for 5 minutes. Remove from heat add in the cardamom powder mix well. Add in the fried cashew nuts and raisins also and keep aside covered. Do not worry if the texture looks a little thinner than in picture. It will become thicker in texture on cooling down.
** “Gavunche rulava Godshe’ / Mangalore Rava (Barik Lapsi) Payasam” is done and ready. Leave this aside for 30 mins. It thickens up well. Now the payasma is ready to be offered as Naivedyam for the occasion, after which it can be served to all. Some do not like the thicker variety of lapsi payasm and prefer this one as it is smoother and tastier when relished. Wheat is considered to be very good for health too. And payasam prepared out of same has a different aroma altogether. You can prepare the same with finer rava too. I will soon be posting the same. So do keep a watch for the same on my blog.
** I am sharing here the link below for the recipe of thicker lapsi payasam, please go through that link to as preparation of both though same ingredient wise, cooking way is slightly different. For the thicker lapsi version, I is easier to use pressure cooker pan, while for the Mangalore rava version, there is absolutely no need of it as this one cooks within a few minutes.
