“Coconut ~ Curd Chutney” … A yummy chutney that can be served with any dish of your choice, but goes best as a side dish with spicy bhaat, upma, pulav, biryani etc. … Yummy Yumz …
This chutney is usually is best served with spicy pulav’s, biryani or upma, bhaat etc. The chutney should be ground fresh and also fresh curds should be beaten and added just before serving or else the chutney goes sour and it looses taste. So do not prepare this in advance but you can make the other preparations for the same before hand, like grating and keeping the coconut. Beating the curds etc. and it can be assembled at the ladt minute. But do serve this with pulavs or upma it tastes yumz.
** For the Preparation of Chutney : Grind to a smooth paste 2 cups of freshly grated coconut (top white part of the coconut) and 6-8 green chillies (more or less depending on the pungentness of the chillies and individual taste), along with 1 inch piece of ginger cut into small pieces to a very fine paste. Remove in a bowl.. The Chutney should be thick enough, do not add water as we are going to add curds.
** For Tempering : Heat oil in a small pan, when hot add in 1 tsp of rai (sasam) and when it splutters add in 1 tsp of hing powder and 10-12 curry leaves. Fry a bit remove and pour over the chutney.
** Add salt to taste to the ground chutney along with one cup of thick beaten fresh curds just before serving and mix well. Now check the consistency of the chutney and then add in water if necessary only to bring to serving consistency.
** “Coconut ~ Curd Chutney” is done ready to be served. Serve this chutney as an accompaniment with dish of your choice. Goes very well with any dry dish. Best with spicy upma or pulavs. But you can serve it with Idly, Dosa too. I served it with Spicy Vangi ~ Tomato Bhaat and it tasted yummy.
