Capsicum ~ Egg ~ Garlic Fried Rice is my very own style of fried rice unlike the one's you get in hotel or generally prepared. Though the one's we get in restaurants taste awesome, I am a bit skeptical on the usage of Aji-No-Moto as is does not suit me on health basis. But then as I love fried rice I came up with my own version without them while I just add a little bit of soya sauce unlike again the liberate usage in hotels. This goes very well with any spicy curry be it vegetarian or non-vegetarian. Also Chinese style of manchurian is the best accompaniment to this fried rice. But here I have served it with Murg Badami / Chicken Almond and it tasted great. Next time for sure it will be with some Manchurian curry .... Until then do try this awesome dish and enjoy with family and friends.
Wash and soak in plenty of water 3 cups of jeera rice for about 30 mins. Wash well, rinse and strain in a colander. In a pressure cooker pan add in the rice along with 4 cups of water, salt to taste and 1 tblsp of oil. Mix well and pressure cook to 3 whistles. Allow to cool and let the pressure drop on its own. Open the lid and allow the steam to pass off and cool a bit before you spread it on a plate and loosen it. The rice should not be too hot or else it will break up and become mushy.
Wash and chop to small cube sized pieces 3 large capsicums. Keep this ready aside. Peel and chop to small pieces about 25-30 cloves of garlic and keep them ready aside.
Now heat about 2 tsp of oil in a thick bottomed kadai, break in directly into the kadai about 3-4 large sized eggs. Keep the heat minimum. Add in a pinch of turmeric (Op) and pinch of salt and keep stirring to get evenly scrambled eggs. Do not at any point overcook the eggs. They should be soft. Remove and keep aside.
In the same Kadai add in 2 tblsp of oil, when hot add in the garlic pieces and fry for a few minutes. Do not let them brown. Immediately add in the capsicum pieces and fry all on high heat for a few minutes. Add in a pinch of salt, mix well, lower the heat and let cook on its own steam for a few minutes. (Do not add in any water). Once cooked 60% add in the scrambled eggs and the cooked rice and mix well. Cover and cook on low heat for 5-10 minutes. Check salt and add if only necessary remember we have added it at various stages also we have add in soya sauce which is salty so do keep that in mind when you add salt. Lastly add in 1 tblsp of soya sauce, 1/2 tsp of coarsely crushed white pepper powder and mix well. Cover and let cook on its own steam for another few minutes. Serve hot.
Note : I have not added any aji-no-moto for my very own reasons you may if you wish add it at the stage when you add capsicum pieces.
