Khatta Meetha Teekha godda ~ kajura (jaggery ~ Dates ) Ravo / chutney .... A medium spicy ~ tangy ~ sweet chutney that goes very well with many dishes ......
Ravo is a jaggery cooked to a thick syrup consistency which is then flavoured with cardamom and served with Oondi. That’s the traditional method we Amchi Konkani Saraswats follow. However I make some changes and add in some spices and tanginess to the same to enhance the taste. Here I have added in some tamarind, dates and seasoned them with some chilly powder and dry ginger powder along with others to the same.
Add in about 300 gms of grated or jaggery cut to small pieces in a thick bottomed kadai. To this add about 2-3 cups water and bring to a boil till a little thick.
Meanwhile soak a small lemon sized tamarind in about half a cup of lukewarm water for 5-10 minutes. Squeeze out the juice and strain. Add this to the cooking jaggery / gur and mix well. When the jaggery comes to a thick syrup consistency add in about 2 tblsp of dates syrup or 10-12 dates soaked and ground to a smooth paste. Add in ½ tsp of salt and mix well. Remove from the fire and keep aside.
For Tempering : Heat 1 tsp of ghee, when it melts add in 1 tsp of jeera and fry for a minute, then add in 1 tsp of red chilly powder and remove from fire. Stir it to mix with the ghee well and pour this over the prepared Jaggery – Dates Ravo / Chutney and mix well. Lastly add ½ tsp of cardamom powder, 1/4 tsp of dry ginger powder / shunti powder and mix well. Cool and serve with Oondi / dosa especially panpole / dhokla / samosa or any other dish of your choice.
Note : Do not over cook the jaggery or else it will become chewy in texture.
