Corn And Cucumber Pachodi.


Corn And Cucumber Pachodi / Salad ........ I simply love this crispy salad which has coarsely added masala .......... Goes well as side dish and with roti / paratha too ...... I enjoyed this with Panpolo / Neer Dosa and It was awesome ......... Yumz ....


Pachodi is actually a dish similar to salad but with the addition of ground masala which is not heated. However, it has to be served immediately or kept in fridge immediately if is to be served later on. This a yummy crunchy salad, that goes very well as side dish. You can enjoy this with any dish of your choice. Goes well with roti / parota / chapati. A light yet nutritious dish which I am sure will be loved by all of you. I had a lot of corn kernels and was wondering of ways to use them when I suddenly thought of trying this pachodi / salad just out of the blue with some of my own variations. Why not …. After all the corns can be added to salads too. So I went ahead with it and it really turned out to be a block buster sort. I repeated it within a few days when I had friends over for lunch and they were too pleased with the same. So here is a simple, crunchy and healthy Pachodi / Salad you will absolutely relish with roti / poori / chapati etc. 


Wash one cup of corn kernels and microwave them for 2 minutes. Do not add in any extra water as the once when rinsing is enough for the same. Remove and keep aside to completely cool. 


To be Ground : Grind to a smooth paste ½ cup of freshly grated coconut with 1 cup of roughly chopped coriander leaves, 2-3 chopped green chillies and ½ inch piece of ginger. Keep this aside.


Peel of the skin of 2-3 (about 300 gms) medium sized cucumber and chop them into fine pieces. Put them in a bowl and along with the cooked corn kernels and 2-3 tblsp of finely chopped coriander leaves. Now add in the ground masala and salt to taste and mix well. 


For Tempering : Heat 1 tblsp of oil in a small pan, when hot add in 1 tsp of mustard seeds and when they begin to splutter add in 5-6 curry leaves and 1 tsp of hing powder. Stir well and lastly add in already roasted handful of peanuts / groundnuts. Mix for a minute and pour this over the mixed Pachodi / salad.


Add half freshly squeezed lemon to the mixture. Mix the pachodi / salad well and serve immediately with any dish of your choice. It goes well as an accompaniment salad with any dish. Goes well with roti / chapati / poori / parota / kulchas etc. I served this with Panpolo / neer dosa and my friends simply loved the combination. You can do the same if you wish.
