Ripe Jackfruit Fritters.


Ripe Jackfruit Fritters (Bajo) With Date Syrup ......... for a change tried this from regular nendrabale banana fritters.,,,..,, For Today's Maha Shivratri Upwas ........ Yumz ....... It was really awesome ......


I said I am going to make ripe jackfruit fritters today and hubby was like What ?? …. I said why not? He had brought 2 kgs of ripe jackfruit and I had to think various ways of using them. Somewhere long back I had read about these fritters made of Ripe Jackfruit, similar to the one’s we make out of Nendrabale Bananas. I had always wanted to make them, but somehow had completely forgotten about it. Looking at the ripe jackfruits and wanting to make something different inspired me to make this forgotten dish. The fritters turned out really awesome and was over within no time. I have got to prepare them soon once more to sit relaxed and enjoy them. The recipe is simple and hazzle free. I have followed the banana fritters recipe, which I have already posted before. Not made any changes in the batter. 


Coming to the Recipe …… Make a thick batter of 1 cup maida, pinch of baking soda, pinch of salt, 2-3 tsp sugar or sugar powder, ½ tsp of cardamom powder, 1 tsp cornflour adding required amount of water. The batter should be of thick dropping consistency. Keep this aside for 10-15 minutes.


Meanwhile remove the inner seeds of ripe jackfruits and cut them lengthwise each into 3 pieces. You should have about 18-20 pieces.












Heat a thick bottomed Kadai with plenty of oil, to smoking point. When it reaches that level, lower the heat and wait for 5 minutes. Now keep the heat on medium, taking care to see that the oil is hot enough throughout the frying process. Add in ripe jackfruit pieces one by one after dipping them into the batter. The batter should coat the jackfruit pieces evenly. Be careful when you add them to hot oil, as to not splutter oil. Keep turning them with a slotted spatula and fry till evenly browned.


Remove the fritters and place them on an absorbent paper for the excess oil to drain off. Repeat the procedure for remaining jackfruit pieces. Serve these fritters hot with tomato ketchup or dates syrup as a snack or tiffin. Enjoy these delicious ripe jackfruit fritters with family and friends.
