Cauliflower Potato Onion Upkari.

Simple Cauliflower Potato Onion Upkari / Bhaji ........... Goes well with Dalitoy and Rice / Roti .........

This one is a very simple upkari / bhaji that goes very well when served with Dalitoy and Rice. This also goes well with chapati for tiffin box etc. Good for digestion and easy on stomach too. Simple in spices this one is a Traditional Saraswath dish ie. served almost in every household. 

Cut cauliflower into medium sized florets. You should have about 3 glasses of the same. You can take about 300 gms of cauliflower otherwise. Check for worms etc. clean and wash in plenty of water and keep this aside.

Peel off 2 large or 3 medium sized potatoes and cut them into thick strips similar to the size of cauliflower florets. This ensures even cooking of the two in upkari. Wash in plenty of water and keep aside. You can cut down the amount of potatoes if you like it that way. We love potatoes in my house so I add in equal measures of cauliflower to the upkari.

Peel and thinly slice 2 large or 3 medium sized onions and keep them aside ready.

Heat 1 tablespoon of oil in a thick bottomed kadai. When hot add 1 tsp of mustard seeds, when they start to splutter, lower the heat and add 2-3 red chilly broken into medium sized pieces, 1 tsp hing powder, ½ tsp of haldi powder and 8-10 curry leaves. Stir for a few seconds.

Add in the sliced onions and fry on high heat for 2-3 minutes till they become a little bit translucent. Add in the potatoes and cauliflower and mix well. Sprinkle some water, cover with a tight lid and cook on medium heat for 3-4 minutes. 

Remove the lid, sprinkle some more water if necessary ie. if the dish is dry, add salt to taste, mix well, cover with the tight lid and now lower the heat and let cook till done. Remove and serve hot as upkari / bhaji with Dalitoy and Rice or Roti during lunch time or dinner time.
