Yummilicious ...
** Come winter season and the demand for different varieties of soup comes on in my home. I have to keep cracking my brains to come across something different each day. Though tomato soup is one of the best and in demand among all soups, we simply love any type of soups with addition of seasonal veggies.
** Winter or monsoon are seasons that's simply great to sip on hot soups leisurely and if there is bread/ bread sticks/ croutons/ wafers it’s that much more enjoyable. There are so many soups that I have yet to post. So watch out for my postings in this blog for many varieties of soups and relish them with your family and friends.
** This is a simple soup with creamy texture but spicy enough to tickle your taste buds. Easy to prepare and very filling on tummy too. I make this several times during winter when these veggies are in season and a few more which I will share soon. I use pressure cooker method, which not only makes it easy but hassle free too.
** You can enjoy this soup with some fried bread slices the way I did this time, or any other crispies or any accompaniment of your choice too. Garlic bread dunked in tastes great too and there are definitely many more option which I am sure you know off, after all each one has their own preference when it comes to food.
** The winter is still on, and these veggies are available in plenty, so just go ahead and try it out in your home and enjoy them for dinner. I am sure your family will love it for a change if you have not yet tried this one. There are many more soups shared in the Blog which you can browse through in leisure and try out too.
** Here is my own recipe for "Hot and Spicy Creamy Cauliflower- Green Peas Soup with Onion- Garlic" ... my style ....
** Peel off the outer skin of 2 medium sized onions (kanda/ piyavu), slice them lengthwise thinly and keep it aside ready. Also peel off the skin of 1 large sized potato (aloo/ batato) and cut them to one inch sized pieces. Wash them well in water and keep it separately aside soaked in water to avoid discoloration.
** Cut about 250 gms of Cauliflower into florets. Wash well in plenty of water, drain and put it in an colander and keep it aside. Peel of the skin of 6-8 garlic cloves (losun/ lehsun), chop it to pieces and keep it aside ready. Chop into pieces 2-3 medium spiced green chillies (tarni mirsanga/ hari mirchi) and keep it aside ready.
** Shell the outer skin of green peas/ vatana and collect about one cup of the same. Wash them and also keep them ready aside. Here you can use frozen green peas too if you have no access to fresh green peas or if they are not in season. It's winter now and plenty of them are available, so I have used the fresh ones.
** In a small vessel add in the green peas, few pieces of cauliflower (say 4-5 only), add in 2 cups of water and bring to boil, lower the heat and cook till the cauliflower and peas and 75% cooked. Remove and drain off the water. Do not throw away the water, keep it aside for cooking the veggies in pressure cooker.
** In a pressure cooker pan add in 2 tblsp of fresh home made butter/ loni (you can use any), when it melts lower the heat and add garlic cloves and fry for a few minutes, then add in the sliced onions and continue to fry for 3 minutes or so. Remove and keep aside some fried garlic's and sliced onions for garnishing later on.
** Now add in the chopped green chillies, remaining cauliflower pieces and potatoes pieces. Toss them and fry all ingredients in the pressure cooker pan well. Add in the water kept aside from cooking the peas and cauliflower. Mix well, add more water if necessary only. Cover and pressure cook on medium heat to 2-3 whistles.
** Remove and keep the pressure cooker aside and let the pressure drop on its own. Once cool enough, open the lid gently and allow the steam to pass away. Now allow the pressure cooked ingredients to cool a little for say about 5-10 mins. Once cooled, remove and blend it in a mixer or hand blender to a smooth paste.
** Pour the ground paste in a thick bottomed vessel. Add in the cooked peas and the cauliflower pieces along with salt to taste and mix well. Check the consistency of the soup and add in more water if necessary, do not make it too thin textured. Bring to a boil on medium heat stirring often to avoid it getting stuck to bottom.
** "Hot and Spicy Creamy Cauliflower- Green Peas Soup with Onion- Garlic" is done and ready to be served. Soups should always be served steaming hot for best taste. Pour them into individual bowls, top it with butter fried onions and garlic kept aside for garnishing, sprinkle some coarsely ground black pepper powder and serve immediately. I served with tava fried bread slices, you can serve with any accompaniment of your choice or you can sip it as it is if you prefer to keep dinner light.
