** Salads play a prominent role in our daily diet, if not for afternoon meal, then we have a large bowl of raita as dinner and it is complete meal in itself. If you have not included salad as a part of your meal, then you are loosing out on healthy nutrients, so do so today. I have already added on lots of salads in various combinations and will be doing so in future too. So choose out one that is suitable for you and go for it. If you cannot prepare a proper combined one then at least munch on a carrot or cucumber slices or a handful of sprouts. I always have sprouts in my fridge ready for use almost all round the year. They can be from any pulses / beans but green moong sprouts are the best as they sprout easily, so does matki. Well, without running into much details let me share this simple salad recipe

** Here is the simple method of preparing “Tomato-Radish-Onion-Green Moong Sprouts Salad” … My Style …

** Peel off the skin and finely chop large sized onion. Peel off the skin of radish and grate it on a medium sized grater. Put them both in a bowl together.

** Wash and wipe 2 medium sized tomatoes clean and then cut them into small pieces and add to the above mixture in the bowl.

** Add in one cup of "Sprouted Green Moong" (mehod given at the bottom of recipe)  to the above ingredients in the bowl. Add in 3-4 finely chopped green chillies, salt to taste, and a tablespoon of freshly squeezed lemon juice.

** Heat ½ tsp of coconut oil (you can use any other oil), when hot add in a pinch of hing / asafoetida powder and then pour it over the salad. Now mix all the ingredients well. Keep it covered aside for 5 minutes.

** “Tomato-Radish-Onion-Green Moong Sprouts Salad” is done and ready to be served. You can serve it as a side dish for any thali or combo meal. You can also relish this as it is for dinner if at all you want to go light and avoid having a meal.

** Many a times due to back to back functions or festivals, we tend to over eat a lot which leads not only to weight gain but sometimes even stomach upsets. I always make a huge bowl of this salad and put it in fridge the next day to such events and eat nothing else but a large cupful of this salad twice a day.
