Whole Green Moong Sprouts~Amba Mor Rice Sweet Khichidi.


“Whole Green Moong Sprouts~Amba Mor Rice Sweet Khichidi (Pongal) Topped with Banana Slices” … prepared this delicious khichidi as Naivedyam today on the special ocassion of Mukkoti / Mukut Dwadashi that is the very next day to Vaikunta Ekadashi observed in the Dhanur masa / Margashira masa, which is a very special day of Lord Venkataramana (Srinivasa / Balaji) and is celebrated in most temples with great pomp … Enjoy-Stay Blessed-Spread Happiness … 

** Sweet Khichidi / Pongal as known elsewhere is a dessert prepared on many festive occasions as Naivedyam offering to God but more so during the month of Margashira masa that falls somewhere around November-December. I have written about this month / masa that is special to Hindus specially down southern parts of India. We Konkani Saraswats prepare different combos of Khichidi during the month and serve it with polo/dosa and I have posted many before too. ** Coming to combination of whole green moong and rice sweet khichidi, I posted similar ones too before, it was almost the same but prepared using brown basmati rice. Another one I prepared and posted was with lapsi/broken wheat and green moong together. Then there are many more with minute differences. This recipe is prepared with minute difference, here the only changes I have made is I have added on organic jaggery powder and sugar in equal quantities while preparing the khichidi and left out the almond slivers too, while rest of the recipe remains same. However, for the sake of convenience I am repeating the recipe here again as and how I have prepared. 

** Here is the simple method of preparing “Whole Green Moong Sprouts~Amba Mor Rice Sweet Khichidi (Pongal) Topped with Banana Slices” … My Style … 

** Ingredients : 
Amba Mor Rice : 1 cup. 
Whole green moong sprouts : 1.5 cups 
Organic Jaggery / Gud / Goda Powder : 100 gms. (Approximately).
Sugar / Shakkar : 100-150 gms (+/- as per individual taste)
Coconut : 1 cup freshly grated. 
Cadamom / Ellaichi Powder : ½ tsp 
Ghee : ½ cup 
Ripe Ellaichi Bananas : 2 (You can use any variety) 


** You will need about 1.5 cups heaped moong sprouts for this recipe. You will have to sprout the moong by soaking and allowing the moong to sprout two days prior before itself. For the method of preparing the sprouts, please check the link given below.

** Wash and drain off excess water from amba mor rice. This is a variety of rice that is available in Mumbai and elsewhere too. The rice really turns mushy when cooked and is excellent for khichidi / kheer / payasams etc. 

** Put the rice along with the sprouted moong in a pressure cooker pan with about 3.5 cups of water. Pressure cook on medium heat to 2-3 whistles. Let the pressure fall on its own. Do not try releasing the pressure as we need it cooked really good. Remove and keep this ready aside. 

** In a thick bottomed kadai, add in the ghee, when hot and melted add in the pressure cooked rice-sprouts and mix together. Add in another cup of water and bring to a boil stirring often. Add in more water only if you find it necessary. Khichidi texture is thick, so do not add more water, let it come to a full boil. 

** Now lower the heat and add in the organic jaggery powder along with the sugar and mix well. Cook on medium heat, stirring often till the jaggery and sugar melts and the khichidi starts to thicken. Once it turns really soft, mushy and well combined, add in the freshly grated coconut and mix well, let cook for another 5-10 minutes. 

** Finally add in the cardamom powder and mix well. Remove from fire and keep it aside covered for 10-15 minutes. The khichidi gets well softened and the flavors will get mixed in properly. This khichidi can be served hot or at room temperature, by adding in banana slices or pieces topped with melted ghee, taste awesome both ways. 

** “Whole Green Moong Sprouts~Amba Mor Rice Sweet Khichidi (Pongal) Topped with Banana Slices" is done and ready to be offered as Naivedyam to God and then distributed among family and friends. Try this delicious khichidi, serve it with any dosa of your choice and enjoy with family and friends. A little bit different from normal sweet dishes, but never the less awesome. The same can be packed in tiffin and carried in lunch box too.
