Coconut Ginger Methi Chutney.

Coconut Ginger Methi Chutney ....... A medium Spicy Chutney that goes very well with Idly, Dosa, Cutlets, Appo or any other dish you like to have with Chutney ......

Coconut chutney’s are a must in my home along with Idly. Sambar and chutney are the most wonderful dishes that go well with any type of Idly. Today however, I just prepared some chutney to go along with Idly. A simple one with nothing but a few ingredients. This simple chutney tastes really awesome with Idly, so go ahead ad do prepare the same whenever you prepare Idly. I have already posted this chutney before but the only difference here is I have not added in tamarind nor seasoned it, just added a curry leaf and a few roasted methi / fenugreek seeds while grinding the same and the taste was a little bit different from the previously added one’s hence thought of adding the same here. So use fresh white part of the coconut only while preparing this chutney for that sweetish taste.

To be ground to a smooth paste : 2 cups of freshly grated coconut, 2-3 fresh curry leaves, 5-6 less spicy green chillies, ½ tsp of roasted methi /fenugreek seeds and 2 inch piece of fresh ginger chopped to small pieces. Grind all with half a cup of water to a smooth paste.

Remove the chutney in a bowl. Add in salt to taste and 1.5 to 2 cups of water. Mix well. This chutney in particular is served thin in texture. If you like it thicker add water as per your liking. The addition of water is solely upto individual liking.

I had tasted thin waterish type textured chutney during my trip to Haridwar and I simply loved it. I had been wanting to prepare chutney on similar lines for quite some time. This chutney is not seasoned. You may do so if you wish. I have not as it tastes simply awesome as it is with that slight tinge of Methi seeds.
