Rava - Multigrain Oats Idly (Oats + Wheat + Barley + Ragi) with Spicy Tomato - Pearl Onion Bhaji and Green Chutney.

 
Rava - Multigrain Oats Idly (Oats + Wheat + Barley + Ragi) with Spicy Tomato - Pearl Onion Bhaji and Green Chutney....


Heat 1 tblsp add one cup of Mangalore rava (barik lapsi) and fry well for 2-3 mts. Remove and let cool. In a microwave or in the same kadai fry one cup of Multigrain oats (Oats + wheat + Barley + Ragi) for 2-3 minutes. Remove and let cool. Add the multigrains and rava together in a large bowl and mix well. 

Add about 5 cups (approx) thick beaten curds, salt to taste, 1tsp grated ginger and pinch of cooking soda to the above mixture. Add some finely chopped coriander leaves. Mix well and leave for 5mts. The batter should be semi thick after the resting time. You can add a bit of water if it turns out too thick and dry after 5 minutes. The resting time is necessary for the ingredients in the mixture to swell a bit or else the Idly will turn dry and hard. 


Meanwhile grease idly moulds with oil and keep them ready.


For Tempering : Heat a pan with 3 tblsp of oil, when hot add in 1 tsp of rai (sasam) and when they splutter add 1-2 chopped red chillies, 2-3 chopped green chillies, 8-10 curry leaves cut into pieces. Fry this for a few minutes and remove from heat. Add a bit of seasoning into eacth greased mould and add the rest into the batter and mix well. 


Pour some of this batter into each mould to 3/4th level only and steam in a preheated Idly steamer for 15-20 minutes. Remove from steamer and let cool for some time say 5-10 mts before you unmould them. Gently run a blunt knife on the rim side of the mould and flip over the mould to remove the Idly. Serve with sambar / chutney / kurma / spicy tomato onion bhaji or any dish of your choice.
