"Gajar (Carrot) ~ Vatana (Green Peas) ~ Methi (Fenugreek Leaves) Bhaji With Peanuts" ........ A simple bhaji with a mixture of seasonal veggies ....... Yumz .......
A simple upkari / bhaji prepared when gajar, vatana and methi all are in season together. The market is flooded with these veggies, and so is my fridge. Today there was some problem in power / electricity. So I could not prepare anything with these much as I could not grind the masala. So just went ahead and prepared this simple bhaji that goes very well with Roti / Paratha / Dosa. An easy to prepare bhaji / upkari which has no recipe as such. All you have got to have is these veggies ready and some roties to relish them with. Here we go ……
** Pick only the leaves part of methi / fenugreek and chop finely. You should have about 1 cup of the same. Rinse properly under running water. Strain well, squeeze out the excess water properly and allow to drain on a colander. Shell the green peas, say about 2 cups. Peel off the skin of 3 large sized carrots and chop them to cubes. Peel off the skin of 2 large sized onion and chop them roughly to medium sized pieces. Keep all these three items ready.
Heat 3 tblsp of oil in a thick bottomed kadai / Pan. When hot add in a tsp of jeera and a tsp of mustard seeds, when they splutter add in 8-10 curry leaves and ½ a cup of peanuts / ground nuts and fry till they are brown. Now add in ½ tsp of haldi powder, 1 large tblsp of sambar powder and 1 tsp of hing / asafoetida powder. Fry for a minute or two.
Now add in the onions and mix well. Fry for a minute or two and then add in the green peas and carrots and mix well. Add salt to taste and about ¼ th cup of water. Cover and cook till 70% done. Now add in the methi leaves and mix well. Cover and cook till all the veggies and cooked and done. Remove and serve hot with chapati / roti or dosa. A simple but yummy bhaji with sweet bitter taste of carrots and methi leaves.
