Beetroot Curd Rice with Mackerel Fries.


"Beetroot Dahi Bhaat (Curd Rice) and Mackerel Fries (Tallele Raja)" ... Simple lunch today as the heat is too much and tummy also wanted something lighter ... I always try adding on salad veggies to curd rice, it not only tastes great, but also adds on nutrition not to mention laziness to cook another Bhaji ... All in one and Yummilicious .... 

** Simple curd rice is a heavenly food that we often have in our home. Addition of curds is very important to your staple diet for its immense health properties and in my home we always consume curds or buttermilk on daily basis. Curds are extremely good for digestion and any stomach issues or when stomach is upset due to any reason. Buttermilk prepared from curds has been a must in Konkani Saraswat homes for centuries now. The lunch is always ended with either curd rice or with a buttermilk drink and it gives a satisfaction on completion of the meal. I have already written a lot about seasoned curd rice and posted a few too, so will not repeat the same. Sharing a common link at the bottom of this recipe for reference of the same and you can check them out in leisure. 

** I have already included the recipe for "Curd Rice / Dahi Bhaat" before here in the Blog. The recipe remains the same except for the inclusion of freshly grated “Beetroot” and a few other veggies. Do try out this dish if you are a curd rice dish lover like me, it tastes great. Beetroot is also very good for health with immense health properties and should be included in your diet. I often add in those veggies that are used for preparation of salad to the curd rice as I prefer it with veggies than plain, also it ensures that one eats proper vegetables. This time too I have included beetroot, onions and tomatoes along with roasted peanuts and a spiced seasoning. A very tasty curd rice with a beautiful color that pleases one’s eyes on seeing the dish itself. Children are sure to get impressed and relish this dish as it will appeal to them very much. 

** Here is my Recipe for “Beetroot Dahi Bhaat (Curd Rice” … My Style. 

** Ingredients :
Rice / Tandul : 1 cup (I used Surti Kolam). 
Curds / Dahi : 3 cups 
Beetroot : 1 large sized. 
Onion / Piyav / Kanda : 1 large sized. 
Tomato : 1 large sized. 
Ginger / Alle' / Adrak : 2 tsp grated 
Green Chillies / Hirwi Mirchi / Tarni Mirsanga : 3-4 

** For Tempering : 
Oil : 1 tblsp (any edible oil, I used coconut oil) 
Peanuts / Groundnuts / Kadlo / Shengdana : a handful / ¼ cup 
Urad dal / Split Black Gram : ½ tsp 
Jeera / Cumin Seeds :   ½ tsp 
Mustard Seeds / Rai / Sasam : ½ tsp 
Hing / Asafoetida Powder : ½ tsp to 1 tsp (depending upon its aroma)
Curry Leaves / Kadipatta / Karbev : 5-6. 


** Cooking of Rice : Wash and drain one cup of rice in water (You can use any ordinary good quality rice for curd rice). Cook in plenty of boiling water until almost done. Remove and strain the excess water. Add in some cold water (boiled and cooled beforehand or you can use Aquaguard / Bisleri / or any other drinking water) mix well and strain the water. This is done to arrest further cooking of the rice, which will result into sticky rice. You can also pressure cook the rice to one whistle, cool and remove the rice immediately. However, see that you add a little less of water to it again to avoid get a mashed quality of cooked rice. Spread the rice in a wide vessel. 

** Add in three cups of well-beaten thick curds to the rice and mix well. Adjust the curd as per your taste. You can increase or decrease the amount of curd to be added depending upon the thickness of curd rice you desire to have. The curd rice should have a semi thick consistency. 

** Peel of the outer skin of onion, chop it into small pieces and add it to the curd mixed rice above. Peel of the skin of beetroot, wash and then grate it and also add to the above. Wash, wipe the tomato, cut into small pieces and also add it to the rice curd mixture. 

** Add to the above rice mixture, salt to taste, grated ginger and  green chllies slit lengthwise or cut into pieces and mix well. Add some finely chopped coriander leaves also and keep the curd rice ready. 

** For Tempering: Heat oil in a small pan fry a handful of peanuts and keep aside to be added on later. You can also use roasted and kept peanuts if you have them ready. Now in the same oil add urad dal and when the colour changes add jeera, mustard seeds, when they splutter add in hing powder, curry leaves and fry for a minute, when done add in peanuts and mix well. Pour over the prepared curd-beet rice. 

** "Beetroot Dahi Bhaat (Curd Rice)” is done and ready to be served. Serve this immediately with any dry chutney or pickle of your choice. The dish has enough spice level in it so you can serve it as it is too with some fries for accompaniment. I served it with fried mackerels (tallele raja) and the combo was awesome and very satisfactory. If you do not eat non-veg you can add on any bajia of your choice, try the combo, it tastes awesome. 

** Always serve curd rice with immediately on preparation lest it runs sour in taste. Do not keep it outside at room temperature as the curds and rice will start fermenting and will turn distasteful. If to be served later or in a few hours then remember to keep it in the fridge and serve cold as it is or you can remove half an hour before serving time and do so too.
