Sprouted Green Gram (Moong) ~ Onion ~ Potato Bhaji (Upkari).


“Sprouted Green Gram (Moong) ~ Onion ~ Potato Bhaji / Kirlailele Moogu ~ Piyavu ~ Batoato ghalnu Upkari” … A simple but delicious and healthy bhaji / upkari that goes very well with roti / poori / paratha or with Dal-Rice too as a side dish … 


Moong are dried green gram available in grocery stores. Moong is high in protien and considered good for health especially the stomach. Moong water is prepared and given to children for strength and energy. Moong dal is prepared from dal by husking off it’s skin. There are varieties of dishes prepared with moong, which is a part and parcel of almost every household in India. Moong can be sprouted and used also. The protein level and digestion improves with sprouted moong. Sprouted moong is used in many dishes like upkari, salad, curries, vada, dosa etc. I have already posted this upkari / bhaji before where only sprouted moong was used, it’s actually the traditional way that sprouted moong in Konkani Saraswat household is cooked. Here I have added in onions and potatoes along with the sprouts and it does enhance the taste. Do try this yummy upkari / bhaji and do let me know via mail or drop in a comment. For sprouting Method : Sprouting is a method used in beans and is process that takes minimum 2-3 days depending upon weather. I will share in the link here to the method of sprouting, for those of you who are unaware of the procedure. Please do go through the link given below for the same ……

** Ingredients :
Sprouted Green Gram / Moong / Mung : 5-6 cups
Onion : 2 large sized.
Potatoes : 2 medium sized.
Mustard Seeds / Rai / Sasam : 1 tsp
Dried Red Chillies : 6-8
Hing / Asafoetida Powder : 1 tsp heaped.
Curry Leaves / Kadipatta / Karbev : 8-10
Freshly grated coconut : 2-3 tsp (Optiona)
Salt to Taste 
Oil : 2-3 tblsp


** Peel off the skin of the potatoes and cut them into medium sized cubes. Wash in plenty of water, drain and keep them aside ready.

** Peel off the skin of onions and cut them also into cubes similar in size to the cut potatoes. Keep them ready aside.

** Rinse the sprouted green gram / moong in plenty of water, drain off water completely and keep it ready aside.

** Heat oil in a large thick bottomed kadai, when hot add in the mustard seeds, when they begin to splutter, lower the heat and add in red chillies chopped to 1” pieces, hing powder and curry leaves. Fry for a minute and add in the onions and fry till translucent, that is till they turn slightly pinkish.

** Now add in the potatoes and mix well. Sprinkle some water and cook covered under medium heat till the potatoes are half cooked. 

** Now add in the sprouted moong, salt to taste and mix well. Add in ¼ cup of water and cook on high heat for 2-3 minutes. Now lower the heat to minimum and cook all the ingredients covered till done. 

** Cook the sprouted moong along with other ingredients till done, checking often to see that it does not get burnt. Once it is cooked you can add in the freshly grated coconut(Optional) and mix well. 

“Sprouted Green Gram(Moong) ~ Onion ~ Potato Bhaji / Kirlailele Moogu ~ Piyavu ~ Batoato ghalnu Upkari” is done and is ready to be served. Serve hot with chapati / roti or as a side dish with Dalitoy ~ Rice. Yummy, delicious and healthy bhaji which is a must to be included in everybody’s diet.
