Red Bean ~ Bottle Gourd Sambar.

Kolmbo / Kolumbo / Sambar is a worldwide famous dish that is served mostly with Idly or Masala Dosa. It is a very famous South Indian Dish that has reached almost all round the world and become a household item for many people who relish this dishes preparing it in a method to their own likings and relishing it with different accompaniments. This dish can be prepared using both freshly ground masala or sambar powder. When the sambar has to be prepared in bulk it is always better to use ground masala as it provides bulk and increases in quantity. While the sambar powder method comes in handy for lesser quantity of preparation of the same. I use both powder and ground masala as per the requirement basis. Here I have used the powder but you can also use the ground masala if you want to make it for larger gathering. Sambar powder I brought from stores, but will soon be making the same and sharing with all of you. The powder I get now, is one of the best available and I have yet to match it in making. I will share the link of kolumbo / sambar prepared using ground masala at the bottom of the recipe. Do go through the same for ground masala. 


** Peel off the skin of bottle gourd / lauki / gardudde and cut them into cubes. Wash and chop to cubes 3 medium sized tomatoes and keep them ready.

** You need about 3-4 cups of tambade bee (Red beans / Rajma) for this recipe. Wash and soak these overnight in plenty of water or for at least 8 hours. Drain off water, wash again in plenty of water and put them in pressure cooker. Add in sufficient water and pressure cook on medium heat to 2 whistles. Note, that you should add enough water for the beans to get cooked properly. The water level should be about an inch above the level of the red beans. Let the pressure drop on its own. 

** Once the pressure cooker has cooled down properly, open the pressure cooker lid and put in the cooked red beans into a thick bottomed vessel. Add in the cubed bottle gourd / gardudde / lauki along with some water and bring to a boil. Once it comes to boiling point, lower the heat to medium and cook till the bottle gourd is almost cooked. 

** Meanwhile, heat 3tblsp of oil in a small pan, when the oil gets hot, lower the heat and add in 12-15 peeled and slightly crushed (optional) garlic into this and fry till it turns almost brown. Keep stirring to evenly fry the garlic brown, once its almost brown add in 1 tsp of hing powder and fry for a second now add in 2 tblsp of sambar powder and fry for a few seconds.

** Fry well, sprinkle some water if you find the masala getting burnt and then pour over the curry in the vessel. Add salt to taste and the cubed tomatoes and mix well. Bring all the ingredients to a full boil, once it starts boiling, check the gravy consistency. If need be add water to bring to sambar consistency. Lower the heat and let the sambar cook for a good 10-15 minutes. The sambar will get thickened and the tomato too will cook by now and impart tangy taste to the sambar. Remove and keep covered aside for 25-30 mins for all the flavors to seep in properly. 

** Add in salt to taste, 2 tblsp of prepared hing water and the tomatoes cubes. Add in a cup of water if necessary and mix well. Add more water if necessary to bring to a curry consistency. Bring this to a boil, then lower the heat to minimum.

** Red Bean ~ Bottle Gourd Sambar With Garlic Seasoning / Tambadebee ~ Gardudde Losuna panna Kolmbo / Sambaru is done and ready to be served. Serve steaming hot with rice. This goes very well with roti / chapati / poori / dosa too, in which case make the curry a little bit thicker in texture. Enjoy this simple dish that is easy to prepare, good for tummy and can be relished with family on any given ocassion.
