Chilled Sesame (White Til) ~ Dry Ginger (Shunti) Coolant.


"Chilled Sesame ~ Dry Ginger Coolant / Tanda Tanda Tilache Doodh ~ Shunti (Adrak) Ghalnu” … Served with Ajwain Crème’ Cracker with Homemade Papaya Jam … A healthy coolant concoction of my own that can be enjoyed any time of the year including days of Upvas / Fasting and when you are very tired and need a break with refreshment … Sesame seeds and Dry Ginger are extremely beneficial for health … In all this is sure good health promoter … So go ahead and introduce this into your lifestyle to build a healthier family, after all health is wealth and good bones are the backbones for lifetime …. ** Again, I come up with a healthy coolant, a concoction of my own with Sesame / White Til and Dry Ginger Powder. This is a healthy drink, good for all as it provides with the immense benefits to health. I have included two such health drinks with Sesame and other combinations before in the blog and I will share the link to the same at the bottom of the recipe. Sesame seeds as we all know by now are extremely beneficial for health, it is said to lower BP, build strong bones, improved digestion and much more. There are many dishes prepared out of sesame / til, like laddos, chikkis, gravies etc. The most famous one is the laddoo that is prepared during Sankranti festival, which I am sure all of you know off and which I have already blogged before. ** Dry ginger powder as known as Sonth / Soonth / Saunth / Shunti / Chukku / Sonth / Suntha in various other languages in India is actually dried form of fresh ginger that is obtained in somewhat off white color and has a very strong aroma and flavor. This powder is used in spices or preparation of masalas, gravies, curries, marinades, masala teas, non-veg dishes, breads, biscuits etc. Ginger both fresh and dried and in powder form are very beneficial to health and have lots of good properties. Kashaya a concoction of various spices is prepared for colds and ginger is included in it as one of the main ingredient. People chew on fresh ginger if they feel nauseous. It is added while preparing Tea, which aides in digestion and is also useful for bones. Said to be anti-inflammatory and subsides pain etc. 

** Extremely busy life has made us reach out for soft drinks which is not only zero on health benefits, but are loaded with bad calories and other preservatives that are not at all good for health. While it’s ok to have them occasionally, one should always develop and implement this good habit themselves and to their families considering Health is the greatest Wealth. Here is a simple and extremely beneficial coolant / cold drink that can be enjoyed throughout the year immaterial of the season. Til / Sesame milk on its own is supposed to be consumed much more during winter / monsoon as it has a little bit of heating properties. But can also be consumed safely during other seasons too. But ensure that you do not exceed the consumption and consume in limits for better health. 

** Warning : If you are having any health issues please do consult your family physician before enjoying this drink as it contains sugar. 

** Ingredients :
White Til / Sesame : ½ - ¾ cup
Sugar : 1 cup
OR
Grated Jaggery / gud : 150 gms.
Dry Ginger Powder : 2 tblsp
Water : as required. (Approximately 1 liter)


** Wash and drain well the sesame/white til after picking them to clean of if there are any dirt particles. Drain well and spread them on thick plain cloth and leave to dry overnight. 

** Note : You can use polished Til / Sesame in which case you can avoid the step of washing and drying them. I used polished white til which is available in Mumbai during the month of Jan. I store them in fridge for longer shelf life.

** Once the Sesame / Til is completely dried, the next morning fry them on low heat for a few minutes until they are a little bit roasted and begin to splutter. 

** Note : If using polished Til / Sesame you can just roast them as it is on tava till they splutter. 

** Now put the roasted sesame / til and the ginger powder in the mixer grinder and grind to a smooth paste with water. Once it is smooth, enough add in the sugar and continue till all are well blended into a smooth paste. The paste should be ground really into a smooth and fine paste.

** Note : If you do not want to use sugar, you can also add grated jaggery / gud while grinding, in which case the colour of the drink will be slightly yellowish ~ brownish. Addition of Jaggery is much more healthy and I usually add it, however, today to retain the colour I have used sugar. 

** Remove and strain the paste adding in water through a fine sieve. Add in another cup of water and mix well. In all you will get about a liter of juice out of the above mentioned quantity. Put it in the fridge overnight or for 4-6 six hours and chill. In case you want to serve this immediately use chilled water or crushed ice once the paste is ground fine and when you have to further add water.

** Note : Do not discard the residue obtained while straining the paste. You can prepare yummy dishes with the same as it is filled with fiber and nutrients. I prepare using them many items. You can add them while kneading the atta / flour and prepare roti / poori out of the same. So Just put it in an airtight dabba / box and keep it in the fridge for later use.

Serve this chilled during any time of the year including days of Upvas / Fasting and when you are very tired and need a break with refreshment or when you have guests or at functions too. Yummy Yumz. Something different to be enjoyed with all for a change instead of the boring cold drinks. Diwali the festival of lights is fast approaching, you can prepare this and put it to chill overnight and serve as and when required.
