Carrot, Onion, Tomato And Sprouted Moong Koshimbir.

 

A Healthy Salad .. Carrot, Onion, Tomato And Sprouted Moong Koshimbir .......


You will need some ready moong sprouts to prepare this salad. I have already posted the method of preparing moong sprouts. Will add the link at the bottom of the recipe. 


Peel the skin of 2-3 large sized carrots and grate them on medium sized grater and keep aside. Peel the skin of 2 large onions and chop them finely and keep it ready aside. Similarly wash, rub with a towel and chop into small piece 2 large sized tomatoes and have them ready aside. Now take a large bowl and add in the grated carrots, chopped onions and chopped tomatoes along with one large cup full of sprouted Moong. Mix well adding salt to taste.


For Tempering : Heat 1 tblsp of oil in a small pan. When hot add 1 tsp of mustard seeds, when they start spluttering add in 8-10 curry leaves and 1 tsp of hing powder, fry for a seccond or two and add this to the bowl of salad. 


Add in some chopped green chillies or 1 tsp of coarsely crushed pepper powder and one freshly squeezed lime juice to the salad. Toss all the ingredients in the bowl lightly together. 


Serve immediately as an accompaniment during dinner or lunch time. Diet watcher’s can have this as a meal by itself too, as adding of sprouted moong increases the protein content in the salad.
