Simple Mixed Vegetable Bhaji.


Simple Mixed Vegetable Bhaji / Upkari / Stir fry ..... This is a dry bhaji / side dish that goes well with Dal-Chawal or Roti ..... Yumz .....


As the name suggest this upkari or bhaji is just that a very simple dish that can be relished both with Dalitoy and Sheetha ie. Spiced Dal and Rice. I just prepared this with some of the remaining veggies at home as I wanted to finish them off fast. This dish can also be relished with chapati / roti as it tastes great. For spicing or adding of masala I have used sambar powder. I like using sambar powder in various dishes instead of adding garam masalas as in my home garam masala is a little bit not preferred. So without running into much details on this lets just go on the simple recipe.


Peel of the skin and cut potato lengthwise into 4 cuts lengthwise. Then slice them into 1/3 inch thickness. This way you will get potato sliced like triangles. Wash in plenty of water and keep it aside. Chop the cabbage also into medium sized pieces. In all you should have about 5 cups of it. Wash, drain and keep it aside. Wash and chop to medium sized pieces 2 medium sized tomatoes. Keep this aside. Pick and chop methi / fenugreek leaves into fine pieces. Say about one cup of the same. Wash, drain and keep them aside. Peel of the skin and chop one large sized onions into pieces.


Heat about 2 tablespoon of oil In a large sized kadai. When the oil is hot enough, lower the heat to minimum and add in 1 tablsp of jeera, let it cook for half a minute, now add in 8-10 curry leaves and stir for a few seconds. Add ½ tsp haldi / turmeric powder, 1 tblsp hing powder, 2 tblsp of sambar powder (any powder available in the market will do) and fry all for a minute. Do not allow the masala to get burnt. If too dry, sprinkle some water and mix well.


Now add in the onion and mix well. Fry till they are a little be translucent. Then add in the cabbage, methi leaves and the potato and mix well. Cover with tight lid and cook of medium heat stirring in between for 3-4 mins. Now cover with the lid, lower the heat and cook till 75% cooked. Now add in the tomato pieces along with salt to taste and mix well. Again cover with the tight lid and cook till done. Remove and serve hot with any dish as an accompaniment.
