Ambuli- Karbevu- Gosale Shire Gooli and Loni Sandwich (Raw Mango- Curry Leaves- Ridge Gourd Skin Chutney and Butter Sandwich).


Utterly Butterly Delicious is not just a jingle, I really do love it applied on bread slices or with dosa … my today’s sandwich is with “Ambuli- Karbevu- Gosale Shire Gooli and Loni Sandwich (Raw Mango- Curry Leaves- Ridge Gourd Skin Chutney and Butter Sandwich)” served with Kadak Adraki Chai (Strong Ginger Tea) … next time you prepare any gooli chutney do not hesitate to try out sandwiches with it along with loni … they taste scrumptious … Yummilicious ….

** I have often mentioned about my love for those soft spongy bread slices from childhood. In between I switched over to dosas and other traditional breakfast items and it was only when in between hubby reminded me that I prepared sandwiches, yes hubby too loves sandwiches. I have more than a dozen combinations of sandwiches in my old diaries and I strongly now feel that I must share them here, a lovely space of my own.

** I guess my love for sandwiches will never be diminished despite those warnings on maida, bread, biscuits being not good for health. Anyways, I prepared these simple sandwiches with store bought brown bread that’s supposed to be better than plain white bread, though personally I feel sandwiches always taste great with white bread, somehow brown breads are always a little bit on drier sides, maybe I am wrong.

** Sandwiches are easy to prepare especially if you are not assembling them with veggies or using the grill or toast method. I have prepared these sandwiches with liberally spread homemade “Butter/ Loni” and “Ambuli- Karbevu- Gosale Shire Gooli and Loni Sandwich (Raw Mango- Curry Leaves- Ridge Gourd Skin Chutney” and just cut them into triangular shape and served them ginger tea for breakfast.

** You can grill or toast these sandwiches too, however, this particular chutney has a unique taste of its own when served as it is. The chutney here needs to be prepared slightly spicier as when it blends with butter it mellows down. I have used homemade butter which does not contain salt, however if using store bought which contains salt then make sure to add less salt to the chutney to avoid sandwiches turning too salty.

** Application of butter first on bread slices gives a layer of protection to bread from turning soggy with application of chutney. Any chutney applied on butter should be ground thick and the one I used is in gooli form to which I will share a link at the bottom of this recipe. The edges of bread slices can be cut if desired or left as it is to avoid wastage, I sometimes do so, but here I have used them as it is, its individual choice.

** Once again, I mention that you can use any chutney you prefer to use or that which your family loves, I am also sharing a common link to chutney recipes shared before along with the one I have used here at the bottom of this recipe, you may chose any that you prefer, I have also shared a picture collage for the step of application, just in case of need, though I am sure you all know it too well after all sandwiches are easy. 

** There is really no recipe as such for this “Ambuli- Karbevu- Gosale Shire Gooli and Loni Sandwich (Raw Mango- Curry Leaves- Ridge Gourd Skin Chutney and Butter Sandwich)”, it’s just the assembling of all ingredients together and serving immediately that matters … try it, tastes awesome .....


** I have used : Sliced brown bread loaf (I used store bought bread), homemade Ambuli- Karbevu- Gosale Shire Gooli (Raw Mango- Curry Leaves- Ridge Gourd Skin Chutney) and homemade Cow's Milk Loni/ Butter, that’s all. You need to have both butter and the chutney at room temperature, so if you have stored them in fridge, remember to keep them out way ahead to thaw and ready when needed.

** Place required number of bread slices on a board or plate. Apply liberally a layer of butter on bread slices. Do not make a thick layer, use sparingly, yet evenly, remember too much of butter is also not good for health, a little bit goes a long way.

** Now apply thick layer of chutney on top of half of bread slices applied with butter ie if you have applied butter to 10 slices, then apply chutney over five only. Now place remaining buttered bread slices inverted on top of prepared bread slices.

** Gently press down the bread to make it compact taking care to see that the chutney does not ooze out. Now with a sharp knife trim off the edges on all four sides (if desired only, I have not cut them) and then cut it into two pieces either into rectangular shape or triangular shape, as you desire, I have cut into triangles.

** Note : There is no need to cut off the edges of the bread slices and make wastage of bread you can straight away cut them into pieces too which is what I always prefer to do, though sometimes I cut trim them and use the edges elsewhere.

** Note : The trimmed edges can be prepared into bread crumbs or just crumble them use in preparation of rava bhakri (ref. to rava bhakri with bread shared before). In which case remember to first trim off the edges and then apply butter and chutney to retain the bread slices clean and tidy to be used otherwise.

** “Ambuli-Karbevu-Gosale Shire Gooli and Loni Sandwich (Raw Mango- Curry Leaves- Ridge Gourd Skin Chutney and Butter Sandwich)” is done and ready to be served. Tastes best served as it is immediately at room temperature for breakfast or as a snack with some hot beverages during cold season and with fresh fruit juice if hot season, either way tastes great. I served it today for breakfast as it is as the chutney I used included all spices and my favorite adraki chai/ ginger tea, my lifeline of the day.

** Easy to prepare, tummy filling, healthy sandwiches that are sure to be loved by all. The chutney applied is prepared with ridge gourd skin, curry leaves and mangoes along with coconut which makes it very healthy. It was loved by all in my home and I am sure will be loved in your home too. The next time you prepared any type of chutney gooli at home, prepare these sandwiches, they really taste awesome, something different from the regular coriander chutney often used for sandwiches.

** Before the debate on good and bad of using bread begins, I would like to mention here that while I am all for home cooked meals there are times when one needs to have some changes too. In my opinion anything and everything consumed in limits will not be of any harm. It is always better to include different varieties of mix and match of food into daily life routine to not only include all nutrients but to also make it habitual when in case of emergencies like when travelling etc. There are many more sandwiches that I prepare often which I will share soon, do keep a track of my blog for more.
