** I have always loved the combo of mildly rices dishes with simple flavorful dals cooked with veggies in fact I try out these combos even with our own GSB Konkani Saraswat Cuisine Curry dishes like ambat, koddel and they taste fantastic. With age it not only becomes difficult to cook meals with 4-5 items, but also becomes difficult in digestion. Habits die hard and despite make some changes to slick to simpler combo meals there are times when I do go back to old methods, but its my earnest will to now stick to combo/ solo meals and go for thali meals rarely to keep up on maintaining health. To all out there, I will definitely be making lovely combo dishes more so from southern parts of India as is my roots, which is healthier and tummy friendly, so do keep a track of my blog.
** And yes, please include curds or buttermilk during every lunch or atleast 3 times a week as they are an excellent source of protein and probiotics, that are not only beneficial for gut health but also a good thirst quencher. You can prepare either chaas or raita or serve it as plain curds whichever preferred by your family. I have already written all that I have to say in individual posts of the recipes, so please go through them in detail. Sharing links to recipes in the thali above as is my practice with thali posts. Do try out various combos, making your own mix and match combinations if need be, depending upon your family preferences and enjoy them with your family and friends this summer. ** For “Bajjile Pappodu (Roasted Papad)” there is no recipe as such, I just used store bought papads and roasted them on open flame.
** For “Buttermilk (Chaas)” … Here I have just add water to homemade skimmed milk curds in the proportion of 1:1 and beaten well, added on some kala namak (rock salt), hing (asafetida) powder and roasted jeera (cumin) powder, that’s all. However, I would like to encourage all to prepare fresh homemade curds with skimmed milk for reaping in more health benefits as they are almost fat less.
** We Indians have always had them included in our daily meals be it as curds, buttermilk or raita and we should thank our ancestors for this introduction pattern of meals. In GSB Konkani Saraswat homes, our meals are always followed by buttermilk which I must mention helps a lot in digestion of food.
