“My Simple Rice-Curry Veg. Thali~ No 406 : Aapus Ambo (Alphonso Mango), Harve Kele- Mitta Gallele Saala ani Keerlu ghalnu Gashi (Raw Banana- Brine Raw Jackfruit and Bamboo Shoots Curry), Beetroot- Carrot- Onion- Tomato Salad, Ukde SheetHa (Red Boiled Rice)” … some traditional curries from GSB Konkani Saraswat Cuisine are so delicious by themselves that all you need is rice to savor it without any frills … brine items have an unique taste of its own that is enhanced when cooked either as a gojju or added to curries … I have used both raw jackfruit (saala) and bamboo shoots (keerlu) that are brined along with Bangbale Kele for this curry … Yummilicious …

** As I mentioned, brine items when cooked impart a unique taste of their own unlike the fresh ones, though the later also tastes equally good. Usually I finish off my brine items around Feb- March, so that I can prepare fresh stock around May- June, however this year due to various issues, I never got round to preparing them often and my stock remains untouched. There are many combo curries that can be prepared using them, which over years have somehow taken a back seat, sure to try post them all soon.

** About “Aapus Ambo (Alphonso Mango)”, do I really need to write anything and would it really justify the taste of this scrumptious mango even if I tried ???  This is a particular variety of mango that is very famous in and around Mumbai and which is sworn by for its awesome taste and color. It is called the king of mangoes and is very sweet and dark orange in color. The best ones are from Ratnagiri, a district from Maharashtra state, though elsewhere towns too they are grown in abundance. Maharashtra is the place these are cultivated by large and sold, however now it is available almost all round the world when they are in season, that is from the month of March to May end though at exorbitant prices, but then that's OK as they are worth it. Enjoy them if available.

** For “Beetroot- Carrot- Onion- Tomato Salad”, I just peeled the outer skin and grated one medium sized beetroot and one large sized carrot. I finely chopped 2 large sized tomatoes and one large sized onion. Tossed all the ingredients together with pepper powder and salt, that’s it, served it immediately. However, there are plenty of salad dishes shared in the Blog, I am sharing common link to all the salad and raita recipes below. You may browse through the same and try out any of them for serving during meals,

** Note : If for any reason you do not want to cook Boiled Rice, you can try normal rice prepared using Surthi Kollam/ Wada Kollam rice by following method, which is normal method of cooking in almost every Konkani Saraswat Home.
