Carrot Beetroot Onion Salad.


“Carrot Beetroot Onion Salad” … just three veggies and this simple, yet healthiest salad can be prepared in a jiffy … you can have this as a meal on its own or serve as a side dish during meals … Yummilicious ….

** You all know that certain veggies are best suited to prepare as salad though you can have them cooked too. However, raw veggies included in right portion during meals are often an healthy choice, though one should avoid them if they do not suit you giving digestion issues. Just include a little bit and check before you do so on regular basis. Before you think what I am exactly trying to say, well I myself came to know recently that salads do not go well on all types of bodies, while they make excellent changes for certain people it may not be so for others. This is so based on ayurveda and naturopathy, of which a few friends of mine who are undergoing treatment mentioned.

** It was then that I realized that the saying that one man’s food can be poison for another man held true. However, having said this a little bit of salad, say a few tablespoons really does not make harm but benefits all, it is only when you go about on excess that you need to watch out for it, but then that is so for all types of food. So, just introduced little by little and encourage the same with youngsters early in life to make it a pattern lifelong. Here I have used only beetroot and carrots along with onions all in raw form. I seasoned it a little bit and served it as a side dish along with other dishes in thali and it was a lovely meal. Do try out adding salads atleast for one meal a day if you are not doing so.

** Here is my simple recipe for “Carrot Beetroot Onion Salad” … my style …

** Peel off the outer skin of two large sized carrots and one large sized beetroot. Rinse it under clean potable water and then wipe them dry. Now grate them both together and add into a wide stainless steel bowl and keep it aside ready.

** Peel off the outer skin of one large or two medium sized onions and then slice them lengthwise as thinly as possible. Loosen the the sliced onions and add them to the grated veggies in the bowl and toss them well.

** You can season either with finely chopped green chillies or coarsely powdered black pepper along with a dash of freshly squeezed lemon juice, salt to taste and a tablespoon of finely chopped fresh coriander leaves.

** Toss the salad and mix well so that all the flavors and seasonings get mixed on well. Cover and put it in the fridge for atleast 30 minutes, this helps in mixing of flavors and cooling of the salad too and enhances the taste.

** “Carrot Beetroot Onion Salad” is done and ready to be served as a side dish along with other dishes during mealtime/ lunchtime or you can have a bowl of the same as a meal if you want to forgo lunch and keep yourself light for diet reason.

** Sometime after heavy lunch at functions or festive time, we would like to go light the following day to balance the intake of calories and also enable proper digestion, this salad serves the purpose very well keeping you energetic.
