Lauki Gajar Oats Soup (Bottle Gourd Carrot Oats Soup).


“Lauki Gajar Oats Soup (Bottle Gourd Carrot Oats Soup)” … light dinners are what everyone seeks these day especially when its summer and you just don’t desire eating heavy food … soups have always come to rescue be it any season or when in any form of health … again gone are those days when all we knew about was a few tomato or veggie soups, these days the mix and match of ingredients to make healthy soups are unlimited … here is one such soup I tried that includes oats and milk thereby topping the chart of healthy soups … Yummilicious …

** When it comes to soup there is always a demand for second serving by young and old alike. These days even babies once they are year old are fed with different combinations of veggies soup to build up immunity and stamina. Gone are the days when one visualized tomato at the mention of soup, these days there are limitless varieties that are not only healthy but tasty too. My hubby is cazy of soup, well I must say we are foodies and love anything that’s tasty, but with cropping healthy issues and aging I need to move on to healthier soups to cut down on fats and keep track of nutrition. Many more to follow as I have made it point now to move on to healthier, nutritious and at the same time tastier soups.

** In my quest for learning more on food I always spend a lot of time browsing through net and reading a lot about nutrition and check out on recipes too. I then come to my own concoctions most of the time to churn out that which appeals to our taste and need at home. Hardly have there been any mishaps in them, so I urge all to follow your heart and try out dishes without hesitation which is the only way to gain knowledge be it in any field. I was hesitant with the addition of milk so I followed my own method and avoided overcooking to ensure it does not curdle. In all a fantastic low calorie nutritious soup, which will definitely be repeated often in my home, so do give it a try and enjoy with family and friends.

** Here is my simple recipe for “Lauki Gajar Oats Soup (Bottle Gourd Carrot Oats Soup)” … my style, give it a try and enjoy a healthy lifestyle ….

** Peel off the skin of lauki (gardudde/ bottle gourd) and cut them into one inch square pieces. Follow the same for gajar (carrots) too, I have used 1 cup of lauki and 2 cups of carrot pieces here. Wash and add them into a pressure cooker pan.

** Peel off the skin of ½ inch piece of ginger (alle’/ adrak) and ½ inch piece of fresh turmeric root (haldi mande), wash, cut into pieces and add in the pressure cooker along with one cup of water and pressure cook to one whistle.

** Note : Addition of fresh turmeric is optional. I add them whenever available as it not only imparts a good color but also has immense health benefits. If they are available do include them in various dishes, if not just skip it no issue.

** Allow the pressure to gets settled on its own, then open and cool down the ingredients to room temperature. Add them into a mixer grinder and grind to a very smooth paste without addition of extra water, remove and keep it aside ready.

** In a thick bottomed stainless steel vessel add about 2 cups of milk (doodh), I used skimmed cow’s milk, you may use any of your choice. Bring to a boiling point, lower the heat and add in 3-4 tblsp of oats (I used quaker) and mix well.

** Cook oats on medium heat stirring often to avoid being burnt until it thicken and gets cooked well. When done add in the ground paste, 1 tsp of fresh loni (butter) and mix well. Check consistency and add more water only if required.

** Note : Again, here too you can skip addition of fresh loni (butter) if you prefer to not have it for any personal reasons. I usually add a little bit as it not only imparts lovely taste, but is good for health and cures constipation issues too.

** Continue to cook on medium heat till stirring often till you see bubbles on surface. Remove from fire, add salt (namak/ meeta) to taste (I used Kala Namak), required amount of coarsely ground black pepper (kaali miri) powder and mix well.

“Lauki Gajar Oats Soup (Bottle Gourd Carrot Oats Soup)” is done and ready to be served. Always serve the soup steaming hot with any topping of your choice as an appetizer or as you dinner depending on your eating schedule.

** I served them topped with pumpkin seeds for a lovely crunch. You can also sprinkle roasted melon seeds or any other dry fruits of your choice as they are also always good for health. The toppings are always a matter of Individual choice.

** In my home soups are always served as our dinner as we always prefer light meals at night. In case you still want to have something filling you can serve some bread, pav, toast croutons or any other dishes of your choice too.

** Note : The color of soup is bright yellow because of addition of fresh turmeric root/ haldi mande which is optional. Otherwise the color will be much lighter in shade which is equally appealing and tasty too, so don't worry.
