Beetroot- Carrot- Tendle- Piyava Bhutti (Mixed Vegetable Semi Dry Curry).


“Beetroot- Carrot- Tendle- Piyava Bhutti (Mixed Vegetable Semi Dry Curry)” … Bhutti is a traditional semi dry/ curry side dish from GSB Konkani Saraswat Cuisine prepared largely using tendle (gherkins/ Ivy gourd) with piyavu (onion) or cabbage with piyavu ... I had one beetroot, 2 carrots and 2 handful of tendle which I wanted to finish off … tried my own mix and match of veggies to prepare my favorite bhutti ... I served it with roti but tastes equally good served with dal- chawal too ... Yummilicious …. 

** Bhutti from Konkani Saraswat Cuisine, as I have written umpteen times before is a semi dry medium spicy gravy, side dish served at lunch along with other dishes. I have included plenty of variations, mix and match of this delicious dish in my Blog here before, so will not run into details. The recipe stand the same while it is only to give you an idea of combo of veggies that I have made this post. I am also sharing a common link at the bottom of this recipe for all the bhutti posted earlier, you may choose any that you would love to try. Here is another combo that we loved relishing for lunch today. I prepared this with whatever leftover veggies were there at home as I wanted to finish them off. ** Here is my simple recipe for “Beetroot- Carrot- Tendle- Piyava Bhutti (Mixed Vegetable Semi Dry Curry)” … My Style …. 

** Clean about 100 gms of medium sized Tendle/ Gherkins/ Ivy gourd/ Tondli/ Tondekai in plenty of water. Remove all the dirt etc. sticking to it properly. Slice of the end tips on both the sides of the tendle/ gherkins. Now cut them lengthwise into half and width wise also into halves. In all you will get 4 pieces of each tendle. Cut all remaining tendle’s in similar way. Wash them and keep them aside ready. 

** Peel off the skin of one medium sized Beetroot and 2 small sized Carrots/ Gajjar and cut them also into medium sized cubes, the same size as that of tendle. Also, peel of the skin of 2 medium sized Onions/ Piyavu/ Kanda and cut them into medium sized cubes and keep them ready aside. 

** Add the cut pieces of beetroot, carrots and tendle in a pressure cooker pan with about a cup of water and pressure cook to one whistle. Remove, wait for 3-4 minutes, then carefully release pressure with the help of tongs, to avoid overcooking of veggies, keep it aside to cool. 


** For Grinding the Masala : Add 1 cup of freshly grated Coconut/ Soyi/ Nariyal, 7-8 Kashmiri Red Chillies/ Kumte Mirsanga/ Byadgi Mirchi, a small marble sized piece of Tamarind/ Chinchama/ Imly, 1 tblsp of Coriander Seeds/ Kothimbir/ Dhania into a mixer grinder and grind to a paste with just enough water. Do not make the paste very smooth or very thin, but at the same time, it should not be very coarse too. You can check out other bhutti recipe, wherein there are plenty of pics too. 

** Heat 2 tablespoons of oil into a thick bottomed kadai/ pan. When hot add in 1 tsp of Mustard Seeds / Rai/ Sasam and when they begin to splutter add in 6-8 fresh Curry Leaves/ Kadipatta/ karbevu and fry for a minute or two. Now add in the cubed onions, mix well and further fry till translucent, say for about 2-3 minutes. 

** Add in the prepared masala and mix well and then add in the cooked veggies along with the water in which it is cooked, salt to taste, mix well. cover and cook on low heat, mixing in between, till almost done. Remove and keep it aside covered for some time say about 30 minutes for the curry to get settled properly and then it can be served. 


** “Beetroot- Carrot- Tendle- Piyava Bhutti (Mixed Vegetable Semi Dry Curry)” is done and ready to be served. Serve it hot as a side dish along with dalitoy/ saar and rice along with some other dishes of your choice for lunch/ dinner. The dish is very tasty and thick in texture, hence goes very well when served with roti/ chapati/ parathas too. 

** Do try this variation and I assure you children love this better than others as beet and carrots are usually their favorite, also both the veggies are extremely good for health and must be included as much as possible into our daily cooking of dishes.
