Rose flavored Kuve' Pitta Duddali (Arrowroot Pudding).


"Naivedyam : Rose flavored Kuve' Pitta Duddali (Arrowroot Pudding) and Goli Bajo" .... tried a new flavored duddali for Naivedyam along with other dishes today ... Duddali prepared by Mom and Goli Bajo by me ... May Goddess Lakshmi fill your home with good health, wealth and prosperity ... ** Duddali is a famous jelly / pudding sort of dish prepared by using Kuve’ Pitta in most of Konkani Saraswat homes. Kuve’ Pitta – is a white powdery sort of flour obtained in southern parts of India and I really have no knowledge of it’s English name. Many pass it off calling it as Arrowroot which actually it is not as arrowroot is a very fine powder prepared root vegetable, and it does have a close similarity to kuve’ pitta. I have included a picture of the same for all of you to understand how exactly kuve’ pita looks like. Duddali ie pudding sort of a dish prepared out of it is also offered as Naivedyam to God on festive days. This flour is believed to have cooling effects on body and many a time it is prepared during summer for consumption when the heat becomes unbearable. My mom is an expert in preparing this duddali and she also loves relishing it. It’s also called Hallbai in Kannada and can be prepared using other fine flours too like nachani and jowari etc. 

** This flour when kept in fridge remains for years without getting spoilt and mom had bought some for me during her last visit to mangalore and I still had some leftover in the fridge. You can prepare the duddali adding on any fruit pulp along with it or syrups to make it flavorful too. The last time I posted it was a simple one with its own natural flavor. I will be posting many more soon so do keep a watch on my Blog. This time for during Diwali festival for Lakshmi Pooja prepared it with addition of rose flavour and it tasted great. I used rose crush syrup easily available in stores for preparing this duddali. Do try this out if Kuve’ pitta is available to you if you live in southern parts of India or else you can always substitute the same with arrowroot powder too. I have personally never used arrowroot till date and I really have no Idea about it as I have never purchased it till date as Kuve' pitta was always available to me, but I have decided to give it a try too very soon. 

** Here is my simple recipe for “Rose flavored Kuve' Pitta Duddali (Arrowroot Pudding)” … My Style …. 

** Ingredients : 
Kuve’ pitta : 1 cup 
Sugar/Shakkar : 1 heaped cup 
Fresh Coconut milk / Nariyal ka Doodh : 1 cup 
OR 
Full Fat Milk/Malaiwala Doodh : 1 cup 
Rose Crush Syrup : 1/2 to 3/4 cup (store bought)
Water/ Paani : 4 cups 


** In a bowl mix well and soak the kuve pitta for about 2-3 hours in plenty of water. Leave it in a place undisturbed. The kuve pita will settle down at the bottom of the vessel and the water will remain on top (nittolu). Gently tilt the vessel so that you can drain off the excess water. Take care to see that the kuve pitta is not disturbed much. All the water that has risen on top should be thrown away. 

** Apply some ghee (melted) evenly on a tray/plate/steel box with lid and keep it ready aside. 

** Note :  (I have used coconut milk for this recipe. For preparing of fresh coconut milk at home, you can check out the link given at the bottom of this recipe or you can always use the coconut milk readily available in the market, tastes equally good, though freshly home prepared is best). 

** Now mix the kuve pitta settled below with coconut milk or full fat milk and water (4 cups) to a smooth mixture along with the rose crush syrup. See to it that the mixture has been evenly mixed and there are no lumps whatsoever. Pour this in a thick kadai and cook stirring on medium heat till it thickness a bit. Do not at any point leave it unattended. You have to keep stirring so that the mixture gets evenly thickened. 

** Once the duddali begins to thicken keep the heat minimum/low to avoid it getting unevenly thickened. Keep on stirring till it turns jelly like with mirror glaze and also leaves the sides of the kadai. Remove from heat and pour it on the prepared tray in one go. Flatten it to make a flat even level with the help of the spatula or the bottom of a tumbler to which you have applied a little bit of ghee. 

** Once you have leveled the duddali evenly, leave it aside to cool down for about 30 minutes Now with the help of a knife give it desired cut marks when it just warm but do not remove it from the tray/box, just leave in the insertion marks. Keep it aside and allow it get completely cooled after which you can put it in the fridge to get chilled for about 2 hours. 


** “Rose flavored Kuve' Pitta Duddali (Arrowroot Pudding)” is done and ready to be served. Duddali can also be offered as Naivedyam to God and later on served to family and friends. I prepared this as Naivedyam during Lakshmi Pooja during Diwali and it was something different than the regular sweet poha/godu povu I prepare. Traditional dishes are a joy to relish, but sometimes some tweaks need to be done for all of us to relish something different too from the routine ones.

** Given below is the link to preparation of "Fresh Coconut Milk" at home, you can always use store made ready ones too, but trust me there is nothing like freshly prepared at home. Also it is healthier as we really do not know what goes into the making of industrial ones.
