Cabbage Koshimbir (Kismuri/Salad)~Roasted Cucumber Mini Papad.


"Cabbage Koshimbir (Salad/Kismuri) with Roasted~Crushed Cucumber Mini Papads" ... These small mini papads (store bought) that resemble vodi / fries just needs to be roasted with a little bit of oil and served as side dish ... for a change prepared a healthy koshimbir by adding it  roasted and crushed to cabbage ... tastes great when served as side dish with Dalitoy~Rice ... Yummilicious …. 

** Koshimbir / Kismuri are a sort of salad side dish that is dry and is quite famous in Konkani Sarawat Cuisine. Koshimbir is usually with veggie while kismuri is a mixture with fried ingredients added on to onion etc. I have posted many variations of this awesome, simple dish both in kismuri and koshimbir style. I will be sharing a common link at the bottom of this recipe on both subject which actually is only in slight variation, you can go via that link and access all the recipes under the kismuri / koshimbir section. I will not run into much details or run into a debate here on kismuri and koshimbir after all it is the dish that matter, what is there in name. They are called in different names in different locations as per the habits in food there, so to each one their own. Let us all just enjoy delicious dishes by preparing them in our kitchen and sharing them with our family and friends. 

** This is a very simple recipe with the only hitch being that you should have access to these cute little cucumber mini papads which are available in Mangalore Stores. I had purchased them a few times before and relished it just by roasting and serving it for lunch. This time however, I though why not try out kismuri with it, but I did not want to use onion or coconut which is normally used for kismuri as I had already prepared batate song a spicy potato dry curry, so I wanted to keep it lighter, plus I wanted to do something out of the cabbage that was sitting in my fridge. So on a hunch prepared it with finely chopped cabbage and it was simple awesome. Try it; in case you do not have these papads you can try with any other spicy ones too, I am sure it will taste equally good. A very healthy koshimbir / salad as the papads here are roasted, crushed and used instead of deep frying as in some cases. 


** Here is my simple recipe for "Cabbage Koshimbir (Salad/Kismuri) with Roasted~Crushed Cucumber Mini Papads" … My Style … 

** Apply 1 tblsp of oil all over 1 cup of “Cucumber Mini Papads” and toss well to somewhat coat the papads, roast them on a kadai or oven till they are roasted. I microwaved them for just 4 minutes in all and they were beautifully and evenly roasted. I then crushed them coarsely and kept them ready aside. 

** Chop finely and keep ready about 2-3 cups of cabbage. Put them in a wide bowl. Add in 3-4 finely chopped green chillies, handful of finely chopped coriander leaves, a pinch of hing /asafoetida powder, pinch of salt and toss well. Now add in juice of freshly squeezed half a lemon and mix and keep it ready. 

** Note : If you are to serve this koshimbir/salad at a later time, keep the prepared koshimbir and the roasted and crushed papad separately. Keep the cabbage mixture in fridge and the crushed papad in an air tight container. Always serve the koshimbir /kismuri immediately once the roasted ingredients are added or else it will get softened/limp. 

** "Cabbage Koshimbir (Salad/Kismuri) with Roasted~Crushed Cucumber Mini Papads" is done and ready to be served. Just before serving time add in the cabbage mixture with the roasted and coarsely crushed cucumber mini papads, toss well and serve immediately. This way the papads will retain its crispness and is a pleasure to eat the crunchy salad. 

** This is a crunchy salad that tastes best when served with dalitoy-rice or pejje jevan ie rice porridge. Kismuri is always served in Konkani homes with ganji oota / pejja along with some bhaji/upkari or a little bit of pickle. Do try this salad and enjoy with your family and friends. As I mentioned above, if these papads are not available you can use any papad or vodi too.
