Gosale Shire-Methi Gooli (Ridge Gourd-Fenugreek Seeds Chutney).


"Gosale Shire-Methi Gooli (Ridge Gourd-Fenugreek Seeds Chutney)" ... A delicious dry textured chutney that can be rolled into a ball consistency, hence called gooli from Konkani Saraswat Cuisine which I tweaked a little bit with addition of some other Spices/Ingredients ... Yumz ...... 

** Gosale shire chutney ie ridge gourd skin chutney is a dish that is prepared many times through the year in my home as we simply love it. For that matter any gooli form of chutney is a must at least once in a fortnight in my home. Gooli is just a word used which means ball. Here the reference is gooli instead of chutney as the chutney is ground to slightly coarse texture and when rolled can be made into a ball form. I have included many types of gooli recipes in my blog and all you have to do is use the search option and you will get them all ready in a row, you can choose that which you would love to prepare. If still you need any clarification, leave in a comment or send me a mail and I will try to get back.  Once again this recipe has been posted twice before in detail with minute changes, and here too by and large the recipe remains same except for the inclusion of methi/fenugreek sees. So, I will write in here only the recipe part and leave out other details, as I have provided the link to both recipes at the bottom of this recipe for reference, please do check through the same for more pictures etc. 

** Here is the Simple Method of preparing the "Gosale Shire-Methi Gooli (Ridge Gourd-Fenugreek Seeds Chutney)" … My Style … 

** Wash the Gosale / Ridge Gourd well and wipe them dry. Slice off the ridges (shire) of gosale (ridge gourd) and chop them into small pieces. I had about 4 cups of the chopped ridge skin pieces. 

** Wash about 4 amlas / avalo / gooseberry and wipe them dry. Chop into small pieces and discard the inner seed. Put the pieces in half a cup of water and cook for 3-4 minutes till it is slightly cooked. Remove and keep it aside to completely cool down. You can also put them in a glassware dish and microwave for 4 minutes, cool and use the same. 

** Note : Using of amlas/avalo/gooseberry is optional and you can use even bimbul (tree sorrel), karmbal (star fruit) or tamarind too. It is the season of amla and I always have plenty of stock in my fridge for inclusion in chutney as they are full of Vit.C. Do try including them in chutney. 

** In a thick bottomed kadai heat 1 tblsp oil, when hot add in tblsp of jeera Cumin) seeds, 1 tblsp of methi (fenugreek) seeds, 10-12 curry leaves (kadipatta/curry leaves), 5-6 green chillies (hirwi mirchi/tarni mirsanga) broken to pieces, 1 tsp of hing (asafoetida) powder and fry well. 

** Now add the ridge grourd skin cut into small pieces and further fry for about 4-5 minutes. Finally add in 1.5 to 2 cups of grated coconut, fry till you get a nice aroma for about 5-7 minutes. Add salt to taste, mix well and leave it aside to cool completely. 

** Note : The traditional method calls for frying the coconut till you get reddish tinge. However I do not like it as the taste of the gosale/ridge gourd gets a bit lost in the process and I like my chutney with a bit of greenish tinge and stronger ridge gourd flavour. You can choose to follow any method. Also since I have added methi seeds, too much frying will turn it bitter. 

** Add the roasted ingredients into the mixer grinder along with the cooked amla pieces along with the water it is cooked in and grind to a coarse paste. Do not add much of water, as you should get a well mixed but coarsely ground chutney which we Konkani’s call gooli. It should come to a balling consistency when rolled in hand and the whole chutney should be rolled into a round huge ball (meaning of gooli actually is a small ball). 

** "Gosale Shire-Methi Gooli (Ridge Gourd-Fenugreek Seeds Chutney)" Is done and ready to be served. You can serve this with Rice and Dal or Saar and it tastes awesome. You can even relish it with Idly or dosa or chapati too. I at times apply it slightly on toasted bread slices too and relish, tastes great.
