Vaisambal (Broad Beans) Chutney with Multigrain Poori and Karmbal~Pudina Coolant.


"Vaisambal (Broad Beans) Chutney served with Multigrain Poori and Tanda Tanda Karmbala~Pudina Panna/Chilled Starfruit-Mint Leaves Coolant" ... A delicious chutney prepared by cooking and coarsely grinding the veggies with spices, tastes awesome with poori / parathas / roti or even with dosas … 

** I am always on the lookout for side dishes to serve with poori / roti / parathas that are both tasty and nutritious and yes easy to make. Therefore, when my friend Navneet shared a recipe in my food group Konkani Delicacies a dish called Vaisambal Chutney I was very much intrigued looking at the texture of the same. On further query I came to know it is prepared using broad beans and then there was no stopping me, I just had to do it. I went and purchase broad beans in the evening itself to prepare the chutney the next day for lunch along with some poori, my other most favorite dish that I can have all through the day unlike plain roti’s. I have not changed anything much in the recipe, except addition of a little bit of urad dal too when tempering and increased the content of onion from small to large and added on a few more green chillies as hubby likes it spicier, that’s it. A lovely dish that goes very well with poori and I truly enjoy the same.

** Ingredients :
Broad beans : 25 nos 
Onion : One large sized 
Green chilli : 4-5 depending on individual taste. 
Garlic cloves : 5-6 nos 
Cumin Jeera powder : 1/2 tsp (roasted) 
Amchur / Dried Raw Mango Powder : 1/4 tsp 
Coriander Leaves / Dhania / Kottamiri Pallo : ¼ cup (chopped) 
Oil : 1 tbsp 
Salt to taste. 

** For Tempering : 
Mustard / Rai / Sasam : a large pinch 
Cumin / Jeera Seeds : a large pinch 
Urad dal / Black Gram Split : a large pinch 
Curry Leaves / Kadipatta / Karbev : 5-6 fresh ones 
Dry Red Chilly : 1 cut into 2 bits. 


** Peel off the skin off onion and garlic and cut them into pieces and keep it ready aside. Wash, string the broad beans ie the hard fiber on the sides and chop them also into pieces. Keep them also ready aside. Chop the green chillies too and keep them ready. 

** Heat oil in a thick bottomed kadai/pan, when hot add in the garlic cut into pieces and fry for 2-3 minutes and then add the chopped green chillies and onions and fry till the onions turn golden in color. 

** Add chopped broad beans, sprinkle some water if needed, cover and let cook on low heat till the beans are cooked soft. In between, stir the veggie so that they do not stick to the bottom and are evenly cooked, remove and let it cool down completely. 

** In a mixer grinder add in the fresh coriander leaves, roasted cumin powder, salt to taste, amchur powder and grind coarsely for a few seconds. Now add in the cooked ingredients and grind all to a coarse texture without using water. Remove into a bowl. 

** For Tempting : Heat the oil in a small pan, when hot add in the urad dal, when the color changes lightly add in the jeera and the mustard seeds. When the mustard begins to splutter add in the red chilly and curry leaves, fry for a second, and pour over the chutney. 


** "Vaisambal (Broad Beans) Chutney” is done and ready to be served. I served it with Multigrain Atta (Flour) Poori and Tanda Tanda Karmbala~Pudina Panna/Chilled Starfruit-Mint Leaves Coolant and it tasted awesome. 

** This chutney can be relished with any dish of your choice. Goes well with roti/ poori/ chapatti/ parathas / dosa etc. Do try out this chutney and enjoy with your family and friends. You can take it in your lunch box to office too remain good for few hours.
