Sandwiches and Tea "A Life Saver" Through Times .... Egg~Pav Sandwich with Spicy~ Crunchy Coriander Leaves~Roasted Peanut (Groundnut) Chutney and Strong Ginger Tea (Kadak Adraki Chai)” … Sandwiches and Tea have played an important role in my life for many years and I am thankful to this Simple~ Delicious~ Healthy~Life Saving Food and Beverage that has been a blessing to me for decades now .... 

** I love sandwiches and can have them for breakfast, lunch or dinner prepared with any combination. I have lived on them for many years and they have been a part of me through my difficult days and I am thankful to them for putting me back in action. Sandwiches are a delight to munch on anytime of the day. In my home we can have this for bf, lunch or dinner too. I try my hand in preparation of chutney with many variations and prepare them in bulk and put them in fridge immediately in an air tight container which comes in handy to use for me at least for 3-4 days. So I get to serve, Idly, dosa, sandwich etc. with this chutney. It really becomes a blessing for me in this hectic lifestyle of mine when at times I do not get time to cook a proper meal. We have built a reputation in business of promptness in delivery / executing of project works handed over to us without any hitches over 28 years which I am proud off and at no cost I want to loose out on it. So I always prepare myself for food emergencies this way as somehow in the recent decade both hubby and me cannot digest much of outside food though we love it very much. 

** There was a time, say about 2 decades back when I put myself into job and neglected health by getting food from restaurants home delivered so that I could devote time to office. It took my health for a toss and I had to pay a heavy price for it or should I say still doing so. Luckily nothing major mishap happened, my acidity levels rose to peak and my Cal. D3 and B12 levels went low. These were OK and could be dealt with but Spondylitis was something I had to unfortunately deal with for life. It was not diagnosed coz. of which I suffered a lot, it was only in the last 5 years that we came to know the culprit and I gave up on outside food that causes havoc. and as per Doctors instructions concentrated on home food. I always loved cooking, but never got time to do much, but now, come what may, there were no excuses and I had to cook and eat good home cooked food. I had to do deal with a lot, all at the same time and at times I was juggling between my health issues, my kitchen and my business all alone with only hubby on my side and I really felt I would loose my sanity soon. I was always getting headaches, body-aches or acidity and life became miserable. 

** Luckily things got balanced by itself about 4 years back for my relief, and my contribution towards office work was cut down massively by hubby dear as he felt that I could not be burdened any more and the same was done by outsourcing most of office work, so that I could relax a bit. I got complete rest for about 2 years and my levels of D3 and B12 rose up and I felt much better, all thanks to my hubby who was the only person who stood like a rock by me, I really shudder to think of those lonely nights of pain, where in at times I sat all through without even blinking. On recovering came the biggest problem, what ?? Well being busy all life now I had time in hand and I felt bore to just sit about doing nothing. I ventured into kitchen and started cooking our favorite dishes once again. I started posting in my friends food group on her insistence who unfortunately is no more. I started my own food page, then blog, then finally started Konkani Delicacies a food group where all my friends could post their awesome dishes. The Culinary Journey is my second successful project the first one being my business which will always be close to my heart. Spirituality is another aspect that saved my sanity, of which I will write later as I am not ready on it. 

** Well, I have written enough about me to bore all, but I write for 2 reasons, one being I love to write, second I want to reach out to those people who are sailing in the same boat as me. To share with them what I went through and if I can be of some help, so be it. If you are reading this, I want to tell you not to loose heart in life, come what may, change routes if need be, be positive and leave out negativity, but above all do not sit and brood and do not waste time. Time is one of the most precious thing that when lost cannot be got back. There is nothing in this life that time cannot heal, you have to move away from the rut yourself, nobody is going to do it for you. For some it is always time lost is money lost coz. they cannot think beyond money, but money always does not bring in happiness though momentarily it does, as it can buy many luxurious and is the most essential thing to have and we all do need it badly in life, I do too. But hobbies/interests that are close to your heart must be pursued to get satisfaction in life or else life becomes meaningless. Be it travelling, reading books, gardening, cooking, art, painting, singing anything that interests you should be pursued for at least an hour a day for a fulfilling life. Well, we do not want regrets later as we grow older, Do we ???

** I guess, it’s time I move on to the part of this "Good Ol' Sandwiches" which has not only stood by me as a loyal friend but has also given me maximum health back. Coming to chutney part used in this sandwich which plays the important role is a simple and awesome chutney prepared using coriander leaves along with roasted peanuts which are a source of nutrients and are always available in the kitchen, so are the other ingredients. I have already posted the chutney recipe, so will share the link to the same at the bottom of this recipe. I have also added on sliced hard boiled eggs which are full of proteins and has always been advised by my Dr. that I should include it in my diet at least thrice a week. If you do not eat eggs your option is to have sliced cheese instead and the purpose will be served. Tomatoes and cucumbers are always available everywhere and they are added on just sliced and are considered to be healthy veggies. You can add in a slice of beetroot or carrot too. I have used Mumbai Pav (bread) which we love,  and get fresh as I have bakery just a stone throw away from my home. If not, you can use any ordinary bread slices too. Try this healthy sandwiches by preparing them at home and enjoy a healthy life. 

** Strong Ginger Tea / Kadak Adraki Chai is another beverage which you should include in your daily diet as it gives in a lot of relief in many ways. Just one cup a day with addition of fresh ginger root has always been considered to be good for health by our ancestors and I am sure you all agree that they knew the best. Again the habit of this ginger tea caught up with me 2 decades back during the same time as high acidity. The acidity was giving me throat infections, irritations and cough. My ENT specialist told me to cut down on all spicy food and drink hot beverages. Now early morning soups was not feasible for me as I did not have energy to do it. One of my friend suggested ginger tea instead of plain tea as ginger had anti inflammatory properties and was good for overall health. Till then all my life I neither drank coffee nor tea. I began with just one cup of steaming hot strong ginger tea in the mornings without sugar and it has stuck to me over 2 decades now. I don't go overboard and drink it any other time of the day. It has helped me a lot and if someone out there wants to try you may do so. ** Here is my simple recipe for “Egg~Pav Sandwich with Spicy~Crunchy Coriander Leaves~Roasted Peanut (Groundnut) Chutney and Strong Ginger Tea (Kadak Adraki Chai)” … My Style ......

** For Preparing the Sandwich : Just apply the chutney liberally on both inner sides of the Mumbai laadi Pav or Sliced Bread. Add a slice of tomato, egg and cucumber in center and fold over the top side and press down to make a tight sandwich and serve immediately with some Tomato Ketchup as accompaniment. Simple is it Not, So try it and relish it with your family and friends, again if you are a vegetarian and do not eat eggs, leave it out and add in a slice of cheese and its done. Simple sandwich is done and ready. Kiddos are sure to love them, and so are their friends. If you are using sliced bread, then you can grill them too. You can also add in any other filling like tikki, cutlets etc. inside instead of the veggies too and try your own combos/variation and enjoy the same. The chutney is crunchy and delicious and goes out well with any combo of sandwich. I served it for breakfast with our favorite Strong Ginger Tea / Kadak Adraki Chai and my tummy was full for a good 4-5 hours. Enjoy them and stay happy.
