This is a dry dish that is prepared almost in every Konkani Saraswat home. Here is simple Broad Beans-Potato Upkari that is delicious, healthy and nutritious ….

** This is a simple bhaji, sort of stir fried veggie as referred by present generation that is garnished with freshly grated coconut … Goes very well as a side dish with Dalitoy (Dal) – Rice … Most of the dishes that come into popularity are most of the time available in our very own kitches. Upkari with simple seasoning of mustard~red chillies~curry leaves is a traditional and old method in our homes, considered very healthy and easy to be prepared. Our ancestors saw to it that one bhaji of any veggie did accompany our full meal. This side dish always occupied a place in the thali then and now too. So go ahead and enjoy the benefit of this simple Upkari I prepared today with Broad Beans and potatoes that tastes great and is very healthy too.

** Here is may simple method of preparing "Broad Beans~Potato Upkari (Bhaji)" … My Style …

** Just cut off the edges of the Broad Beans and string them throughout the length of the beans they will come out like a string, check the picture posted on broad beans for a proper knowledge. Then cut them into ½ inch pieces. In all you should have about 3 cups of the cut vegetable.

** Peel off the skin one one large or two medium sized potatoes and cut them also into ½ inch sized cubes and put them in plenty of water for about 10 minutes and then strain and rinse well under running water along with the broad beans in a colander and keep it aside for a few minutes for the water to drain off properly.

** Heat 1 tblsp oil in a thick bottomed kadai, add 1 tsp of mustard seeds (rai / sasam). When they begin splutter add in 3-4 dry red chillies cut into pieces, a pinch of hing (asafoetida) and a few curry leaves. Fry for a few seconds.

** Add in the drained broad beans-potatoes and mix well on slightly high flame for a minute or so. Lower the heat, cover and cook till almost done, then add in salt to taste and sprinkle some water in between if necessary. Cover and cook on low flame till almost done.

** Finally add in 1 tblsp of freshly grated coconut to the upkari / bhaji and mix well. Cover and cook for a minute or two and remove from fire and it is ready to be served.

** "Broad Beans~Potato Upkari (Bhaji)" is done and ready to be served. Serve it hot as a side dish with Dalitoy and Rice or as an accompaniment to any dish of your choice. You can prepare upkari / bhaji in same method to most of the veggies too. Trust me its very healthy and nutritious.
