Moong Dal-Cucumber Koshimbir/Salad.


“Mooga Dali-Taushe' Koshimbir (Moong Dal-Cucumber Salad)” … A simple delicious – healthy koshimbir / salad that can be served as a side dish along with other dishes … yumz .... 

** Salads or Koshimbirs are a delight to relish along with the dishes or as it is. This is a common koshimbir usually prepared using grated raw mango when in season along with it for added on tartness specially during the festival of Ram Navami. But since it is liked a lot in my home I prepare it during other seasons too by adding on a dash of lemon juice in place of raw mango. Prepared this today to serve it as side dish along with other dishes in my Veg. Thali of today. A simple salad / koshimbir that is very easy to prepare and can be prepared actually in no time except for the 2 hours duration that is needed for soaking of the moong dali. Otherwise it hardly takes much time. However, you can prepare all the rest of ingredients ready and put it in the fridge while you leave out the moong dal to soak and add it just before serving, which actually gives you enough time in case you decide to prepare this on at the last minute. Try it, taste awesome and is a different type of salad that is delicious-crisp and Yumz. 

** Here is my simple method of preparing “Mooga Dali-Taushe' Koshimbir (Moong Dal-Cucumber Salad)” … my style …. 

** Wash well and soak 1 cup of moong dal in plenty of water, covered aside for about minimum 2 hours. Once it is soaked well, rinse it well in colander and give the final rinse with boiled cooled water and keep this ready aside. 

** Peel of the outer skin of 2 large sized cucumbers and cut into into small pieces. Put this in a bowl along with the soaked and drained moong dal. Now add in 4-5 finely chopped green chillies, salt to taste and freshly squeezed juice of one lemon and mix well. 

** For Tempering : Heat 1 tblsp of coconut oil in a small pan, when hot lower the heat to medium and add in ½ tsp of mustard seeds, ½ tsp of hing powder and 6-8 fresh curry leaves. Pour this over the moong dal-cucumber mixture, garnish with a tsp of finely chopped coriander leaves (optional) and mix well. 


** “Mooga Dali-Taushe' Koshimbir (Moong Dal-Cucumber Salad)” is done and ready to be served. Serve this as a side dish along with other dishes and enjoy the crunchy salad. You can also serve this with black chana upkari, tastes great if you just add on a few poories along with it.
