Gajar Ka Halwa / Carrot Halwa with Milkmaid.


"Gajar Ka Halwa / Carrot Halwa with Milkmaid" ... A delicious Halwa prepared and relished by almost every Indian when it's the season of those red sweet carrots and they have flooded the market now ... For a change prepared the halwa using milkmaid, Sharing this sweet dish with all of you ... Enjoy the halwa and be happy ... Always ... 

** The famous Gajar ka Halwa / Carrot Halwa can be prepared in many ways. Gajjar ka halwa is the most sought after dessert in central and northern parts of India. In Mumbai during the monsoon season you get carrots that are thin and large in size and they are also bright reddish in color. Usually it is called delhi gajjar and this is slightly sweeter in taste than the normal orangish red colored ones. This gajjar / carrots when in season is mostly prepared into halwa and relished as it is or with poori / roti and Ice Creams. I have already posted the recipe of my usual method of preparing the Gajjar ka Halwa before and you will find the same if you use search option. This is one dessert that really needs no introduction as almost in every Indian Home it is prepared and is relished by all specially children, they simply love this halwa and always crave for more. So, I will not run into more details of the same. 

** This time I prepared the halwa using milkmaid ie. sweet evaporated milk and it was delicious. I had a small tin of milkmaid so I thought of trying the halwa with the same. But I must admit here that, I still love the halwa prepared by using thick full fat milk and cooking it for a good 1 hour till done which tastes simply awesome, so does the one’s prepared using mawa, which I will be adding on soon. Again, I also prepare using milk powder or boondi laddoos too. All, in fact have their own unique taste and are great in their own way. As sweets are something not much a favorite in my home, I am falling short in posting the same, but preparing them now in smaller quantities so that I can share them here. For those who are in short of time this is the best way to go about preparing the same as it gets done faster than the other and tastes great too. 

** Here is my simple method of preparing "Gajar Ka Halwa / Carrot Halwa with Milkmaid" … My Style …. 

** Wash well, wipe dry and peel off the outer skin of about approximately 1 kg of carrots.  Grate them and keep it ready aside. 

** Heat 2-4 tblsp of homemade ghee in a thick bottomed pan/kadai, when the ghee melts add in the grated carrots and fry them on medium heat for 4-5 minutes, till the gajjar is well fried. Now add in one cup of full fat milk (boiled and slightly cooled) and let the carrots cook on medium to low heat till it is well cooked and mushy. 

** Do not add in more milk or water as once the gajjar / carrots start cooking its starts leaving its own juice too, so it is sufficient to cook the same or else the cooking time simply increases. But still if you find it necessary you can add in another half a cup of milk or little bit of water and continue to cook. 

** Now add in about 150 ml of milkmaid, 1 cup of sugar and mix well. Cook all till the sugar has melted and the halwa has cooked to a good thick consistency. Keep stirring to avoid the halwa getting burnt at the bottom as it starts thickening.

** Now add in 1-2 tblsp of ghee and mix well, continue cooking till the gajjar ka halwa, leaves the sides of the pan / kadai. The halwa is done now, add in ½ tsp of cardamom powder and about half a cup of slivered almonds (approximately) and mix well. Remove the halwa in any vessel / serving dish you want to serve it in. 


** "Gajar Ka Halwa / Carrot Halwa with Milkmaid" is done and ready to be served. Serve in individual bowls by garnishing with a little bit of almond slivers with any side dish of your choice. You can serve gajjar ka halwa, both hot or at room temperature. It’s individual choice of how one likes to relish the halwa. You can also serve it topped with a scoop of vanilla ice cream which I will be posting soon. It tastes awesome and during this season, during many marriage receptions they serve it on that style. 

** Note : If you do not have Almond Slivers you can slice the whole almonds thinly and use the same. You can also roast or fry cashew nuts in little bit of ghee and add on the same. In fact, you can add in any dry fruits like pista, raisins, walnuts to the halwa, they all taste good with the halwa. You can also add cus cus fried in little bit of ghee too, you can check my other recipe wherein I have done so. Always prepare the halwa with little bit of variations each time to give a different touch to it. 

** Note : Try this quick and fast version of Gajjar Ka Halwa and enjoy with your family and friends. If you have guests dropping in, you can always prepare the halwa the previous day and keep it in an air-tight container in the fridge. Just allow it to thaw for sometime or reheat it slightly or microwave it for a minute before serving and it simple tastes awesome and makes you tension free of last minute hustles.
