Sweet Corn Kernels ~French Beans Bhaji.


“Sweet Corn Kernels ~French Beans Bhaji (Jolu~Beans Upkari)” … Simple~healthy stir fry side dish that tastes awesome when served with Dalitoy (Spiced Tuvar Dal) and SheetHa (Rice) or even with roti / chapatti / poori / parathas … Yummy Yumz … 

** Sweet corn kernels are available in plenty in the market and they are picked and sold, so it is that much easier to cook. The yellowish kernels are so beautiful to look when loaded in baskets to be sold that one is really tempted to purchase them. I always buy some, though not in large quantities coz. somehow, even when stored in fridge they somehow turn sour also it is that much healthier to have them fresh. I will not run into much details about its benefits as all are aware of it. I have made so many dishes using these beautiful kernels that I have lost count. Salads, curries, upkari, bondas, pulav are just to name a few of them. I am cracking my brains as to what more can be done out of these nutritious corns. Till then enjoy the simple bhaji that is a delight to munch on. I have posted before the one which included corn and ladys finger together upkari. This upkari too is the same in all ways except that I have used fresh beans along with corn kernels here. Do try this yummy dish and enjoy with your family and friends. 

** Here is the simple recipe for the delicious upkari / baji …. My Style … 

** You will need about 200 gms of French Beans and 1 heaped cup of sweet corn kernels. 

** String and cut the French beans into 2 inch long pieces. Add corn kernels to it, put it in a colander and rinse under running water and keep it aside for the water to drain of completely. 

** In a thick bottomed kadai, add in 1 tblsp of oil, when hot add in 1 tsp of mustard seeds (sasam/rai), when they begin to splutter add in 2-3 red chillies, cut into bits (+/- as per your taste), add in a large pinch of hing (asafoetida) and few curry leaves and fry for a few seconds. 

** Now add in the rinsed and kept corn kernels and French beans and mix well. Add in a tablespoon of water and cook on high for 2 minutes. Then lower the heat, cover and cook on low heat until both French beans and corn are almost cooked. Now add in salt to taste and a tablespoon of freshly grated coconut and mix well. Cover for another few minutes, remove from fire, sprinkle a dash of fresh lemon juice (Opional) and mix well. 


** “Sweet Corn Kernels ~French Bean Bhaji (Jolu~Beans Upkari)” is done and ready to be served. Serve this as a side dish during meals along with other dishes. Tastes awesome, children will love the crunchy taste too. Also this is another healthy way of eating veggies as it is almost a stir fry method. Do try this and enjoy with your family and friends.
