My Green Dishes Thali 78.


My Green Dishes Thali 78 : Gosale (Ridge Gourd) Dishes : Gosale Bajo (Ridge Gourd Bajia), Gosale Upkari (Ridge Gourd Bhaji), Avalo~Gosale Shire (Gooseberry~Ridge Gourd Skin) Chutney, Avalo~Gosale Shire (Gooseberry~Ridge Gourd Skin) Saaru, SheetHa (Rice)” … today it is ek bhaji anek roop … Gosale is a versatile veggie that can be prepared in many ways … Here are a few dishes prepared using Gosale for my “Go~Green~Thali Lunch” … Yummilicious …. 

** Again, this time I am sharing a simple Thali, that is actually a breeze work to cook as the Veggie here is just two. I have used ridge gourd / Gosale in Konkani vegetable to prepare all these four dishes, that is bajo/bajia, upkai/bhaji, gooli/chutney and saaru/saar which I served with rice. Gosale is a dish that has lots of water content in it and has ridges which we call shire in Konkani. The same is thinly sliced out and cut into small pieces and fried along with other spices and coconut and ground to a chutney. Again the same when coarse ground is chutney and when ground fine can be prepared into saaru. This veggie can be cut into round slices and dipped in batter and deep fried as bajos, while if cut into small cubes it can be prepared into upkari/bhaji. Again, this veggie can be included into masala curries also. I will including them all in future post, but for today, I was in a mood to prepare a green thali ie a thali that included dishes that were all green in color. 

** A few years back I had come across a theme in my friends food group where in she had asked us to post one color thali post and I had prepared something similar and posted then. Then again there was a theme on single veggie used in different ways. Those days she was the only one who thought of such beautiful themes and run them as events often. Those days I was not into blogging, so never got round to doing the same, but we did have loads of fun thinking what and how dishes could be done. Well, here is another similar one that looks beautiful and is equally delicious and health one at that too. Try this out and enjoy with your family and friends. 1 “Gosale Bajo / Ridge Gourd Bajia” … Bajias or Bajo needs no intro’ for any Indian … These are delicious deep fried golden and crisp snacks that is served along with other dishes during lunch / dinner … This is mostly served during monsoon festive season as they are freely available in large quantities during that time … Yummy Yumz ...

2. “Gosale Upkari / Ridge Gourd Bhaji” … A healthy and tasty upkari (bhaji) that is served as a side dish along with other dishes … You can also make this as patla bhaji and relish with rice or roti … A very healthy upkari which has lots of fiber content in it …. Yumz …

3. “Avalo~Gosale Shire Gooli (Gooseberry~Ridge Gourd Skin Chutney)” … This is dry coarsely ground chutney that can be bound into a ball consistency which is called gooli in Konkani Saraswat Cuisine … It is usually done with gosale shiri ie the ridges of ridge gourd skin, but today I just gave it a twist and added on Amla / Avalo / Gooseberry / Nellikai to the same and prepared the gooli … The outcome was really fantabulous … yummy yumz ….

4. “Avalo~Gosale Shire (Gooseberry~Ridge Gourd Skin) Saaru” … A delicious saar prepared using the same chutney ie “Avalo~Gosale Shire Gooli (Gooseberry~Ridge Gourd Skin Chutney)” by just grinding it little bit smoother and they seasoning the same … A delicious saar that goes very well with rice and other side dishes …. Yumz ….

5. “Cooking Rice Starch Free / Vanu ghalnu SheetHa” … Rice cooked and the water is drained off to remove excess starch. The rice remains well cooked without sticking to each other … Do try this formula / method of cooking as it is very healthy.
