Cucumber~Coconut~Amla Pachodi (Salad).


“Cucumber (Taushe/Khakadi)~Coconut~Amla (Gooseberry/Nellikai) Pachodi (Salad)” ... I simply love this crispy salad which has coarsely added masala ... This time I added amla for the tangy taste and it turned out tasty … A healthy combo salad that goes very well when served as side dish with chitranna, roti, pulav or any other dishes … Yummilicious …... 

** Pachodi is actually a dish similar to salad but with the addition of ground masala which is not heated. However, it has to be served immediately or kept in fridge immediately if is to be served later on. This a yummy crunchy salad, that goes very well as side dish. You can enjoy this with any dish of your choice. Goes well with roti / parota / chapati. A light yet nutritious dish which I am sure will be loved by all of you. I have posted similar post before where in I either added sweet corn kernels or the one with radish gratings, you can use the search option for pachodi and you will get them all. Do try out the different variations and relish them as side dish along with other dishes. This time I have added amla for added health benefits while grinding the masala. You can even add in tamarind or squeeze out the juice of one fresh lemon towards the end. But I suggest you try out this combo as it is not only health~nutritious but tasty too. So here is a simple, crunchy and healthy Pachodi / Salad you will absolutely love to relish with roti / poori / chapati etc. Tastes awesome with chitranna too, A spiced dish with the addition of rice and ground masala to which you can either add raw mango or amla too. I served with amla chitranna, the same which has been posted before. I will share the link to the amla chitranna at the bottom of the recipe, so also the pachodi with corn, to try them out too. 


** Here is the simple recipe for “Cucumber (Taushe)~Coconut~Amla (Gooseberry/Nellikai) Pachodi” … My Style … 

** Wash and wipe 3-4 medium sized amla / gooseberry / nellikai / avalo. Slice the edible portion and discard the inner seed. Put them all in a glassware dish with ¼ cup of water and microwave on high for 2 minutes. Allow to cool complete. 

** If not using microwave put them in a kadai with ½ cup of water and cook on medium to low heat for 5 minutes. Remove and allow to cool complete. You can use either of the procedure. We just need to cook it a little bit that is all. Do not overcook it. 

** Masala to be Ground : Grind to a smooth paste ½ cup of freshly grated white top part of the coconut with 1 cup of roughly chopped fresh coriander leaves, 2-3 chopped green chillies, the cooked amla along with the water in which it was cooked and ½ inch piece of ginger. Remove and add this into a bowl. 

** Peel of the skin of 1 large (about 300 gms) sized Cucumber / Taushe / Khakadi and chop them into cubes of say half an inch pieces. Add them into a bowl to the ground masala along with salt to taste and mix well. 

** For Tempering : Heat 1 tblsp of coconut oil in a small pan, when hot add in 1 tsp of mustard seeds and when they begin to splutter add in 5-6 curry leaves and ½ tsp of hing powder. Fry a little bit and pour it over the mixed Pachodi / salad. 

** “Cucumber~Coconut~Amla (Gooseberry/Nellikai) Pachodi” is done and ready to be served. You can garnish it with some roasted groundnuts too. Mix the pachodi / salad well and serve immediately with any dish of your choice. It goes well as an accompaniment salad with any dish. Goes well with chitranna/ roti / chapati / poori / parota / kulchas etc. I served this with amla chitranna for Vijaya Dashami festival Thali and it was loved by all. Do try it out and enjoy with your family and friends.
