Brinjal~Tomato~Drumstick Leaves (Moringa) Sambar Urad Dal~Rice Khotto (Idly).


“Brinjal~Tomato~Drumstick Leaves Sambar / Vaingana~Tomato~Mashinga Sanga Pallo Ghalnu Kolumbo served with Urad Dal~Rice Khotto (Idly cooked in jackfruit leaves baskets)” ... Health is wealth and it is the duty of the person in charge of the kitchen in every home to keep this in mind while cooking. I have included drumstick leaves/mashing sanga pallo/moringa leaves to sambar which is considered to have loads of health benefits … this sambar tastes best when served with with Idly/Khotto/Appo/Dosa or you can relish with rice too … Yummy Yumz … 

** Idly Sambar or Khotto with Sambar is a very common dish anywhere in southern parts of India. For a person who loves Idlies there are a huge varieties of the same that can be prepared at home. But somehow very few variations have caught the fancy of sellers or buyers. Most of the hotels or restaurants that sell them or even fast food center when it comes to Idly they stick to Idly prepared using urad dal and rice. This is the most common and the best out of all that is prepared in the varieties of Idlies. Many of us have ventured out of the box and prepared so many awesome variations in preparing these. However, this one still has a large fan following and the most prepared and relished out of all. It stands out proudly among all and somehow has no competition at all. And when relished dunked in hot sambar it tastes so awesome that for a person who loves Idlies, it heaven. As the Khottos are steamed it is also considered very good for health and many relish this for lunch instead of breakfast as it is very filling it. When carried in lunch box I am sure your friends will want more of it. 

** For many years now I always prepared Idly as I never had access to the jackfruit leaves to prepare them into baskets to cook Idlies which in Konkani Saraswat language ie Konkani is called Khotto. About 2 yrs back in one of the offices that we have been going to for over 25 yrs there was some renovation work which made me go round the building for the sake of parking spot and to my delight I saw a jackfruit tree which was about 10 feet below, due to which the branches and leaves were reachable from where I was standing. I asked the person in charge if I could pick the leaves and he said sure, but looked at me in dismay when I picked about 50 leaves. He surprisingly asked me what I would do and explaining was the toughest part, so I just went to my blog and showed him the page where there was step by step procedure of preparing the same. I will be sharing the link at the bottom here so that anyone who is interested can check out on the same. You may find it difficult at first but with practice it is faster and moreover saves the time of dish washing.
