Chinese Style Masala Eggs.


“Chinese Style Masala Eggs” … Eggs are really a blessing and come in handy when in hurry … This is my own mix and match jhatpat dish that I prepare when I am in rush or want to eat something tangy for dinner … A delicious garlic flavored curry with the addition of ketchup and soya sauce hence I have named it Chinese Style … Yummy Yumz ... Eggilicious … 

This is a simple Egg curry that I prepare with addition of tomato ketchup and soya sauce, so I have name it chinese style masala eggs. I simply love this curry and prepare it often when I am lazy or not in good health to do much of tedious work or in a rush to work or yes, if I want to eat something tangy for dinner. It’s not only satisfies your taste buds, but also peps up your mood of not eating something boring which leads to mood swings. Food is an important part of almost every persons life and if that is not appealing then starts all problems in life. Off course there are many more things in life that has to be given more priorities but I myself have experienced that a healthy body and a healthy mind starts from food. For many years when I gave more importance to my career or should I say I could not find that time to cook much due to my heavy schedules both my mood, health and life had gone for a toss. I never realized this till I took a back seat due to health reasons. 

** Today, I almost cook two to three New Dishes in a week that I have always wanted to cook or had cooked but stopped over the years. Even after relishing all the good food that I cook at home my weight though does not go down does not increase which gives me the satisfaction that I can enjoy it without guilt. My health has also improved a lot in the last few years after eating home cooked food. Now I have stepped on a step further and decided to get introduced to healthier and guilt free options. I have purchased an air fryer which has been catching on dust as I could not give much attention to foods that could be prepared in it. Also a sudden emergency of having to go through Cataract Surgery made it impossible to read much. Its over 4 months now and I am seriously thinking off going about it. My friends have shared in so many recipes using air fryer, that I have decided to try out first, before I go about trying my own variations, after all I have to get the hang of it. 

** Coming to this particular Masala Egg curry, it is one of my favorite over years as it can be prepared fast with ingredients that are easily available in our kitchen. Eggs are always filling and nutritious, but I have also tried this recipe with soya granules and if you you are a vegetarian you can just replace it with it or even paneer. Paneer dishes are another of my favorite and again of which I forget most of the time to prepare. This is so because I do not like the paneer which is frozen which we get easily in stores. I always prefer to buy fresh ones that are available in dairies, which though are costlier are tastier and healthier. We do have one nearby in my vicinity but somehow I always forget to purchase when I leave for home in the evening from office. As all my food are usually cooked by 10 AM in the mornings, I just do not have the option of preparing paneer and have to do without it. I must somehow now remember to prepare the same too. And yes, you can add paneer to this same dish which turns awesome. 

** Here is the simple Recipe for “Chinese Style Masala Eggs” … My own way …. 

** Ingredients : 
Hard Boiled Eggs : 4 
Garlic / Losun : about 15 - 18 
Onion / Kanda / Piyavu : 2 large sized. 
Kashmiri Red Chilly Powder : 3 tsp 
Black Pepper Powder / Kali Miri : 1 tsp 
Coriander / Dhania / Kothimbir Powder : 2 tsp 
Jeera / Cummin Powder : 1 tsp 
Fennel / Badisep Powder : ½ tsp 
Haldi / Turmeric Powder : ¼ tsp 
Garam Masala Powder : ½ tsp 
Tomato Ketchup : 2-3 tblsp 
Soya Sauce : 1 tsp 
Curry Leaves : 8-10 fresh one’s. 
Salt to taste 
Oil : 3-4 tblsp 

** Hard boil the eggs, shell them and either prick them all round on the surface with a toothpick or make gashes. But do be careful the eggs have to be intact. Keep them ready aside. ** Peel off the skin of garlic and onion and chop them separately into small pieces and keep them ready aside. 

** Heat the oil in a thick bottomed kadai, when hot reduce the heat to medium and add in the garlic and fry till the color changes slightly. Now add in the onion pieces and continue frying till they turn soft and translucent, continue for a few minutes and then add in the curry leaves and fry for a second. 

** Now add in haldi powder fry for a second and then add in chilly powder, pepper powder, coriander powder, jeera powder, fennel powder and garam masala powder. Fry for a minute, if necessary sprinkle some water ie if you find that the powders are getting burnt. 

** Add in the tomato ketchup, soya sauce (I used store bought, any brand will do) and half cup of water and mix well. Check and add salt to taste as both ketchup and soya sauce contain lots of salt. Add only if you find it necessary, I never add as I am always particular about salt addition which in excess is harmful. Let all ingredients come to a boil on medium heat. 

** Now add in the eggs and mix well. Pour as much of the gravy as possible over the eggs frequently and cook on low heat, till the eggs absorb as much flavor as possible, say about 4-5 minutes. If you find the curry is too dry add in another half cup of water and mix well and let cook till done. 

** Remove from fire and keep it aside for a good 15 minutes for all the flavor to seep in. This is a thick gravy dish and does not taste good if thinned out much. So be careful with addition of water, you can always add in a little bit of hot water while serving too if you find that the gravy has turned out thick on resting. 

** “Chinese Style Masala Eggs” are done and ready to be served. Serve them as side dish with any accompaniment dish of your choice. I had this with panpolo (neer dosa) and it tasted very delicious. You can choose any dish of your choice. But do try the dosa combo and enjoy with your family and friends. Do remember to give me a feed back via mail, or do leave in a comment. ** Eggs should always be boiled perfectly, if not they look messy and unappealing. The outer yellow color of the yolk should never turn bluish an indication of over cooking.
