Tutti Frutti Eggless Cake.


"Tutti Frutti Eggless Cake" ... Managed to bake a good cake despite oven faults ... still long way to go for perfection ... But the cake was really soft and fluffy ... Enjoyed eating it with my friends who loved it and asked for more ... Yummilicious ..... 

** Cakes are a form of baked sweet dessert, that is loved by almost all who like desserts or baked products. Children simply love them and always demand that they be brought or prepared at home. I have always loved cakes and cookies through out my childhood and relished them many a times at my neighbors home. She used to make awesome cakes, cookies and ice creams. But somehow, I was not old enough to learn baking when we left that neighborhood. Those days till the age of 14-15 yrs we were never allowed inside the kitchen as usually it was a joint family and too many members in the home. Being the youngest, I actually never learned anything much as I hardly entered the kitchen except for food. 

** During the initial years of my marriage, I had bought a oven, which till date is the same one. I baked often then and they were perfect, though I knew only 2 recipes and prepared the same. Over the years, business schedules took over most of my time and I lost interest in baking as buying over counter was much more easier. Again a decade back when my health went for a toss, and severe back pain made me take things easier. Now for the last few months I wanted to get back to baking as I love everything that is baked, but to my dismay my oven does not behave properly. There is some problem with the heat adjustment and I somehow am reluctant to purchase a new one as I am not sure if I will put it to full use. 

** When my friend Akshata posted this a few days back in my food group, the recipe was an easy, one so I decided to give it another try in my oven and baked the same today. I faced the same problem of slightly burnt top while rest of the cake was awesome. Well I won’t give up and have decided to do something about the same. So more baked dishes are sure to follow as and when time and health permits. Some of my friends have been gracious enough and given me loads of tips on handling the disobeying oven. So I need to really give it a good try before I really think if I should discard it and buy a new one, which I really think will not be necessary. The recipe is very easy and I have not changed anything in it and prepared it exactly like how Akshata prepared.

** Here is the recipe to "Tutti Frutti Eggless Cake" …. 

** Ingredients : 
Maida / APF : 1.5 cups 
Cream or Oil : ¾ cup (I have used sunflower oil) 
Milk Powder : 1 cup (I used skimmed milk powder) 
Baking Powder : 1 tsp 
Cooking soda : ½ tsp 
Warm Milk : As required (I used about 1 cup of skimmed milk) 
Powdered Sugar : 1 cup 
Vanilla Essence : ½ tsp 
Tutti Frutti Pieces : About ¼ cup 
Salt : a pinch. 

** Mix all the dry ingredients together well (maida + milk powder + powdered sugar + baking soda+ cooking soda). Sieve it through a fine sieve so that it is mixed evenly. 

** Now add in the oil, vanillas essence, salt and mix it well. Add in warm milk little by little while mixing all the while till you get a thick consistency of that of a cake mixture. (I approximately used about 1 cup of skimmed milk) 

** Mix the tutti frutti pieces slightly with a little bit of flour / maida to get it somewhat dusted around it. This is done to avoid the pieces sinking at the bottom while baking, so it is important to be done. Add this to the mixed batter and mix it slightly. 

** Grease a mold or baking dish with melted ghee slightly and dust it with flour / maida evenly. This is done to prevent the cake from sticking to the mold and it loosens out well and comes out beautifully once it baked and cooled. 

** Preheat the oven to 180 deg. C. Add the prepared batter into the prepared cake mold and slightly tap it on the kitchen platform or a wooden table. This is done to even the batter layer and also to release any air bubbles if trapped within. 

** Put the mold in the center of the oven and bake for about 35 to 40 mins or till a toothpick inserted comes out clean. Remove and completely cool before you loosen the sides and then slowly invert the cake on a plate and cut to slices. 

** "Tutti Frutti Eggless Cake" is done and ready to be served. Serve them fresh and enjoy as a snack at tea time with family. You can also send them in tiffin in your kids lunch box. You can also prepare these as a break for children to enjoy when they come home hungry after playing in sunshine during holidays. 

** Note : You can also add about 3-4 tblsp of cocoa powder for preparation of chocolate cake for the same recipe and leave out the tutti frutti. You can also add in some nuts for the chocolate cake.
