Corn~Cucumber Salad.


“Corn~Cucumber Salad” … A simple~delicious~healthy salad … If you like corn kernels like me try this simple salad and enjoy it just as it is for dinner or as a side dish along with other dishes, either way it tastes awesome … A filling one for sure … Yummy Yumz … 

** Salads should be made a part of our daily diet, but somehow Indian food has always not given much importance to it on daiy basis. Though salad is enjoyed by many, it never dominates our food pattern. Things and changing though and as people adapt to new lifestyle salad has made an entry with bang with the health conscious teenagers and parents are left with no choice but to learn preparing them in various combination keeping in mind nutrition. Here is one such salad that is low on calories but a tummy filling one and nutritious too as corn is considered very good for health. A simple one that can be relished as it is for in between hunger or as a dinner the way I prefer. Yes, you heard it right, as age advances one should go very light on dinner so at least two to three days a week my dinner is most of the times salad or soups. Now that the monsoon has begun it’s either rasams or soups that really induce sleep. Introduce this salad to your family, I am sure even children will love them, the crunch of corn is very appealing one. 


** Wash and drain off water from 200 gms of corn kernels and microwave them in a glassware dish on hight for 4 minutes. Remove and let cool. You can also cook or steam them as per your liking. I always prefer microwaving as it saves time. 

** Peel of the skin of one large sized cucumber and chop them into small pieces. You should have about 3 cups of the pieces. Add this to the cooked and cooled corn kernels along with 2-3 tblsp of freshly grated coconut (optional), 4-5 green chillies chopped fine and salt to taste. 

** Mix well all the ingredients well and lastly squeeze in juice of one small fresh lemon and add in a handful of freshly chopped coriander leaves along with 3-4 pudina (mint leaves). Toss all the ingredients loosely, so as to combine them well. 

** “Corn~Cucumber Salad” is done and ready to be served. Serve this salad immediately as it taste crunchy and awesome when served immediately. The water content in the cucumber will or else leave and the salad turns slightly waterish if you keep it aside. Enjoy with salad with your family and friends and do drop in a feed back.
