Kairi Masoor Dal Fry / Raw Mango Red Lentil Dal Fry.


"Kairi Masoor Dal Fry / Raw Mango Red Lentil Dal Fry" ... For a change tried out masoor dal with addition of raw mangoes, turned out to be a delicious Khatta MeetHa TeekHa Dal that goes very well with rice or ghee rice ... yum yum ... 

** Dal is a dish that is prepared on daily basis in almost every Indian homes. A little bit of dal goes a long way. We Konkani Saraswats have our own famous Dalitoy and every Amchi simply loves that dal and will not compromise it for anything. But change is always necessary in between. So I try my best to add in different types of dals too as not only for a change in taste, but for health benefits too. It is believed that tuvar dal which is extensively used dal in India in preparation of Dals has higher protein level and sometimes has a tendency of raising uric acid in the body. Doctors advice cutting down on too much of Non-Veg, Eggs, Meat and Tuvar Dal if it is found that a persons uric acid level is on higher side. In order to balance use some other dals too at times and relish the same with rice or any spiced rice items. Red Lentil or Masoor Dal is one such dal which is healthier in option so is moong dal. 

** Many a times I prepare Kairi Dal ie dal prepared with addition of raw mangoes out of tuvar dal, as in my home we like khatta meetha teekha dals very much. Today for a change I thought why not prepare the same with the addition of red lentils instead of tuvar dal. It’s the season of both ripe and raw mangoes and I try my best to always include seasonal veggies and items or fruits into our daily diet. I always believe God created the universe with certain thoughts in mind giving us seasons and the delicacies that go with it. One should try not to change that and go with the flow by eating what is in season, though nowadays we do get many things throughout the year. The dal turned out really delicious and superb and I am sure to try many more varieties in dals using this very dal for sure. Red Lentil Dal being slightly sweeter in taste I added on a little bit of more red chilly powder, than I usually do, but in all really a lovely dal indeed. 

** Here is the Recipe to "Kairi Masoor Dal Fry / Raw Mango Red Lentil dal Fry" …. 
** Ingredients : 
Masoor Dal / Red Lentils : 1 cup 
Raw Mango : 1 medium sized 
Jaggery : about 50-75 gms grated 
Red Chilly Powder : 2 tblsp 
Jeera / Cumin Powder : 1 tsp 
Dhania / Coriander Powder : 1.5 tsp 
Haldi / Turmeric Powder : ½ tsp 
Salt to taste 
Oil : 1 tsp + 2 tblsp 

** For Tempering : 
Onion : One medium sized sliced thinly lengthwise. 
Garlic : 4-5 chopped fine. 
Ginger : ½ inch chopped fine 
Curry Leaves : 6-8 fresh 

** Wash the dal well, put it in a pressure cooker pan with enough water, the level of the water should be about 1 inch above the level of the dal in the cooker. Cover and pressure cook on medium heat to 2-3 whistles. Allow the pressure to fall on it own. 

** Wash and wipe the kari / raw mango and grate along with the outer skin using a medium holed grater and keep it ready aside. Discard the inner seed. You can slice off the thick outer green skin if you do not like it and then grate too, but I have retained the skin as I like it that way, also it gets cooked and there is absolutely no harm in using it. Keep this ready. 

** In a thick bottomed kadai, add in 1 tsp of oil, when hot, lower the hat to minimum and add in the haldi powder, dhania powder, jeera powder and the chilly powder and fry for a few seconds. Do not allow the masala to get burnt. You can sprinkle some water if needed. 

** Now add in the cooked dal along with the grated kairi / raw mangoes and the grated jaggery and mix well. Add in one cup of water to the dal and bring to a boil on medium heat. Keep stirring in between to avoid it getting stuck at the bottom. If the dal is still too thick you can add in another glass of water. Once the dal comes to boil, add salt to taste, mix well, lower the heat and let it simmer. 

** For tempering : In a small pan heat the 2 tblsp of oil. When hot lower the heat to medium and add in the chopped garlic and fry till its color changes slightly, now add in the ginger and fry for another minutes and then add in the finely lengthwise sliced onion and further fry till the onions are fried translucent. Now add in the curry leaves, fry for another two minutes and pour this over the simmering dal. Mix well, let cook for another minute and remove from fire. 


** "Kairi Masoor Dal Fry / Raw Mango Red Lentil dal Fry" is done and ready to be served. This dal turned out to be a delicious Khatta MeetHa TeekHa Dal, that I had not bargained for. I had prepared plain rice, so I served it with rice along with other dishes, but I am sure this will definitely be a lovely accompaniment to mildly spiced rice, like pulav or ghee rice too. Do try this awesome dal when raw mangoes are in season and enjoy with your family and friends.
