Bhel is a common Mumbai Street Fast Food, prepared from kurmura / puffed rice that has now enveloped almost all growing cities of India. There are many varieties in preparation of Bhel, with masala, dry masala, curry masalas, just addition of spices etc. Ingredients are also added as per one’s own liking's and veggies are also a part of the same. Kurmura is the basic Ingredients that is common in all bhel, though nowadays many prepare Bhel out of other puffed ingredients too. A favorite of young and old alike, this is a highly recommended food for diet conscious people if done in proper care. Kurmura in itself is low or almost nil in calories, so it is just what you add on as spices and other mixes that count to make it a healthier option. This one is on the lines of a healthy Bhel as I have included even whole green Moong sprouts along with peanuts etc. that are very good for health. I will not run into much details on Bhel, as it is my strong belief that it is well known worldwide and needs no introduction. Remember to serve bhel immediately on preparation, never prepare the same before hand as it will turn soggy. You can keep all the ingredients chopped, cut, grated, and ready before hand and assemble it just before serving. So try this variation and Enjoy with family and friends as a time pass or to kill that in between hunger. You can always try your own variations by mix matches as per your family taste. 

Ingredients I used for this Sukha (Dry) Bhel are ….. 
Kurmura / Puffed rice / Chanburo : 3 cups 
Corn Poha / Beaten Corn : 1 cup 
Whole Green Moong Sprouts : ½ Cup 
Carrot / Gajar : 1 large sized grated 
Roasted Gram / Putani : handful (Roasted) 
Peanuts / Ground nuts : handful (Roasted) 
Onions : 2 medium sized finely chopped. 
Green Chillies : 4-5 finely chopped (+/- depending on individual preference) 
Fresh Coriander leaves : handful (Finely chopped) 
Kala Namak : As per taste
OR
Any Salt to taste
Chaat Masala : ¼ tsp 
Lemon : ½ 
Hing Powder : 1 tsp 
Coconut Oil : ½ tsp 

** Roast corn poha or microwave till crisp. Hardly takes a few minutes. If it is not available you can leave out the same. I found this recently in the super market mall and bought the same to try out for the first time. 

** Roast the kurmura if it has turned limp or is not fresh. We need crisp ones. I did not roast as I had them crisp at home. 

** In a large wide bowl add in the finely chopped onions, grated carrots, green chillies, coriander leaves, moong sprouts, kala namak, chaat masala and mix well. 

** Heat the coconut oil and add in the hing powder and pour this over the mixed ingredients. Add in the roasted gram, ground nuts and mix well. 

** Lastly add in the kurmura and corn poha and toss well. Add in the freshly squeezed lemon juice and mix well. If needed you can add in a dash of red chilly powder too. 


** “Sukha (Dry) Bhel With Kurmura~Corn Poha~Whole Green Moong Sprouts” is done and ready to be served. Bhel is a chat pata dish that should be eaten freshly prepared or else it goes soggy and is tasteless. So always, prepare the same just before serving and never before hand. Enjoy this with your family and friends and stay healthy.
