Rice And Egg Omelette.


“Rice & Egg Omelette” Served with Tomato Ketchup (Store Bought) and Kadak Adraki Chai (Strong Ginger Tea) … A healthier combination of rice and eggs with addition of veggies that gives a perfect classic fluffy omelette by helping in reducing the number of addition of eggs while retaining the spongy texture … Can be served for breakfast, brunch, lunch or dinner … Totally healthy ~tummy~filling omelette … Yumz ….. 


** Omelette is a very fulfilling dish that can be enjoyed during lunch or dinner too, though it is considered an traditional English Breakfast. These are really very easy to prepare and being highly nutritious, it’s a great dish that should be given to growing children who are very active all the time. Omelet's are best served with some brown / white / multi grain bread / Bombay pav as accompaniment. Children will love it if you add in a spoon of ketchup too and they simply love it. Omelette with veggies and with addition of other ingredients are a healthier and lovely combination to be introduced to children who are otherwise reluctant to eat veggies and lentils etc. I have included different combinations of Omelettes before as my family loves eggs in any form. 

** With growing health awareness, it has now come to light that too much of eggs is not so good. So I have been thinking for some time now, how to decrease the amount of eggs in a omelette as too much of eggs are actually not good once you enter into your fifties nor for the younger generation who eat plenty of cheese etc. Eggs have high content of cholesterol in them and it is difficult in digestion. I wanted to cut down on the amount of addition of eggs, yet maintain the fluffiness and bulk in the omelette. Addition of flour was choice which I had already done so before and wanted to think of something else, as ground fine flour does not give much of spongy texture. I felt that grinding the ingredient instead of addition of flour would to the trick of giving extra sponginess similar to that of our very own Idly texture. 

** So here is my very own version of “Rice ~ Egg Omelette” I prepared using coarsely ground ukda / boiled rice with some veggies and it was truly awesome. My hubby was very happy with this omelette and this is going to stay in my kitchen till I discover more options, which I know I will. The best part of the omelette is you do not need any bread or pav to be served along with this one (so some more calories are cut off), just a little bit of ketchup is all that is enough. I have added in all the spices and made it sort of all in one omelette that can be carried in lunch box or tiffin. I am so excited with this one, that my brains have already started working on other options and methods or varieties in cooking these. I am sure your family will love this. Trust me it’s the best way to make children eat healthier without loading in calories and yet keeping their bellies full. 

** Ingredients : 
Ukda Rice / White Boiled Rice : 1 cup 
Coconut : 2 tblsp freshly grated (Optional, but do include it gives nice texture) 
Fresh Eggs : 3-4 large one’s 
Green Chillies : 5 – 6 cut into thin rings or finely chopped. 
Onion : 2 medium sized Chopped finely. 
Carrot : ½ cup grated 
Haldi / Turmeric Powder : a pinch 
Ginger : 1 inch grated. 
Garlic : 4 – 5 large cloves grated. 
Curry leaves : 8-10 fresh one’s finely chopped 
Coriander leaves : handful finely chopped (I did not have any so skipped it) 
Salt to taste 
Water : as needed 
Ghee : For frying of Omelettes 

** Tomato Ketchup for serving (I used store bought) 


** Wash and soak the ukda / white boiled rice overnight or for at least 8 hrs. Next morning rinse well and put it in a grinder and grind coarsely to rava texture adding little bit of water. Do not add in more water. Just enough to grind. Keep this ready aside. 

** Note : You can use ordinary rice too (surti kolam or any other) in which case you can soak it for just 2 hrs. Rest method will be the same. I have started using more of Ukda / boiled rice recently as it is unpolished or rather not polished much and is much healthier compared to other rice. 

** In a porcelain or glassware bowl, break and add in fresh eggs. Add in a little bit of salt and beat with an electric egg beater (you can use hand beater too) till it multiplies in quantity. Remove and keep it aside. 

** In a bowl add in the ground rice, grated coconut, turmeric powder, chopped green chillies, chopped onions, grated ginger, grated garlic, chopped curry leaves and coriander leaves, salt to taste and mix well. See to it that all ingredients are well mixed. 

** Now add in the beaten eggs and mix well. Lastly add in the ground rice and further mix till all are well blended. Check the consistency of the mixture, it should not be too thick. It should be slightly thicker than that of plain egg omelette texture. 

** Heat a non stick pan or any other regular pan you use to remove Omelettes. I have a different small sized pan which I use only for egg omelettes as I do not like to mix up the tavas. Add in a few drop of ghee / clarified butter and spread it all round evenly on the pan. 

** Pour in a cup full of the prepared egg mixture into the tava and spread it by tilting or gently with the back of a rounded spatula. Add in a few drop of the melted ghee on the sides. Cover with a lid and cook on medium heat till the top of the omelette is cooked. If not sure, just check by touching the top surface with a finger. If the mixture does not stick to the finger, it’s done. 

** Add a few drops of ghee on top of the omelette and gently flip it over and cook the top side too without covering the pan. Remove the omelette and put it in a serving plate. Proceed the method with remaining egg mixture. You will get about 4 semi thick fluffy omelettes with about 8 inches in diameter. 


** “Rice & Egg Omelette” is done and ready to be served. Serve it hot with tomato ketchup for added tasty flavor. This omelette does not need to be served with bread as we have added in rice. But if you desire, you can do so, tastes equally good. I served it with just tomato ketchup and kadak adraki chai / strong ginger tea. A good tummy filling omelette that is very fluffy and tasty that can be relished for bf, lunch or dinner. Try this out and enjoy with your family and friends.
