Chilled Pomegranate Panak.


"Chilled Pomegranate Panak" ... Panak is a Sweet ~ Spicy ~ Tangy traditional Konkani Drink served during festive times … Today being “Kartik Ekadashi” A day when most Hindus observe a fast whole day, I prepared it with a twist by adding in Pomegranate Juice along with Panka Jaggery … Go ahead and relish this drink and Stay Blessed … 


Panak is a traditional Amchi drink that is famous amongst Konkani Saraswat Community and is served during festive time. It is a spicy ~ sweet ~ tangy drink prepared with jaggery / goda, dry ginger, lemons etc. This is served during most of the festive times in Southern parts of India specially in Mangalore during Rata Saptami / Teru festival. Even in Mumbai during Ganeshotsav 5 day celebrations at GSB Seva Mandal, Kings Circle, it’s served all the days. The spicy drink leaves a tingling sense on the tongue for quite some time. Jaggery cubes are prepared with the addition of the spices and sold in native place called “Panaka Goda” meaning Jaggery with panak spices. Preparation of Panak is very easy with it, you just melt it in water, chill and enjoy. However, in Mumbai it’s sometimes difficult to get it though the Mangalore stores in many vicinity do sell them. 

Most of the time I prepare this Panak by adding in fresh spices and make do the drink myself. It’s very easy to prepare even if the panak jaggery / goda is not available if you have the ingredients to the same ready. Last week however, I chanced upon getting this Panaka Goda in Managalore Stores and so thought of preparing the same today on the occasion of “Kartik Ekadashi” … One of the biggest Ekadashi Festival among all Ekadashi’s that falls during the year time, when most Hindus observe a fast whole day … Today I prepared the Panak with a different twist by adding in Pomegranate / Dalimb Juice for Khaata (Tangy) taste instead of lemon. I have already posted the traditional method and with the addition of orange juice panak drink before and will share the link at the bottom of this recipe. You can follow that recipe too and just add in the pomegranate juice and it’s done. 

** Here is the Simple Recipe to "Chilled Pomegranate Panak" …..


** Remove the inner seeds of 2-3 large sized pomegranates and keep them ready. 

** Powder 500 gms of Panak Jaggery / Goda a little bit, add in 2-3 cups of water and keep it aside to get a little bit soaked. Say for 5-10 minutes. This makes the jaggery soft and easier to be ground. 

** Roast 2-3 tblsp of white sesame / til on a tava. When the sesame / til starts to splutter, remove it and keep it aside to cool.

** Note : Many a times the Panak Jaggery / Gud / Goda available has white Sesame / Til included in it. However, this time somehow it was not included so I roasted and added it myself. If the ones available to you have them, you can leave out this step.

** Now put the panak jaggery / gud / goda into a mixer grinder along with the water in which it is soaked and grind to a smooth paste. Remove it in a vessel.

** Note : If the Panak Jaggery you purchased has white tii / sesame in it then plz. do not grind it in mixer grinder as the sesame / til will get ground, so just use a whisker or large spoon and mix till the jaggery gets melted.

** Now add the pomegranate into the mixer with 2 glasses of water and juice it using pulse mode for some time. You can grind too, but pulse mode is better. Now strain the juice through a very fine sieve into the prepared ground panak jaggery.

** Add in the roasted white til / sesame to the above jaggery – pomegranate mixture and mix well. Check the consistency and add in water if necessary. Put it in the fridge for few hours to get chilled. 


** "Chilled Pomegranate Panak" A traditional Konkani Saraswats drink but with a twist is done and ready to be served. Serve in glasses topped with a few fresh pieces of pomegranate floating on top. Tastes heavenly when served very chilled. Especially if it’s hot season, then this chilled drink really cools one down. The spice and tangy taste remain in the mouth for quite some time … So go ahead and prepare this one as a serving drink to your guest during any festival time or function or any other occasion and enjoy and get the satisfaction of seeing people smile … Wishing all a Very Happy Pious Kartik Ekadashi … Stay Blessed

  1. I don't have Panak Goda. What else should I use along with regular jaggary?

  2. Hello Ajay ... thanks for leaving the comment. Plz. check the link posted at the bottom of the recipe ... the first link will give you the recipe of panak that can be prepared using just ordinary jaggery with the addition of spices. You can prepare it that way and just add on pomegranate juice instead of water. If you go through the recipe properly I have mentioned in the write up. Thank you.
